Fluffy Scrambled Eggs

These were hands down the best scrambled eggs I have ever made. They were rich and moist. I used this as the base for breakfast burritos. I was feeding a large group, so I used two dozen eggs & added a 12 oz can of evaporated milk. I drained two cans of Rotel tomatoes and added these after I had the eggs & milk mixed. When the eggs were set, I added 2 cups of cheese. Oh my, these were delicious.

Cherry Crisp

I prefer crisps to pies any day and this is simple, delicious and quick to prepare. It is rich and a scoop of ice cream is a nice way to top it off. I haven't tried it yet, but I am betting that chopped almonds would be an exquisite way to replace the pecans in the topping. There is a lot of nutmeg in this, but I really like nutmeg so I wouldn't adjust a thing.

Rhubarb Strawberry Crunch

Incredibly good. I made this today for Father's day, and only brought home a small bowl I had to protect from my 9 year old neice. She ate three helpings, and would have finished off the pan. My dad whose favorite pie is Strawberry/Rubarb loved it.

Authentic Louisiana Red Beans and Rice

This was very good. I used dried red beans instead of kidneys, but will probably use kidneys next time because the red beans bled while I was soaking them, and wound up more pink than red. I also used Tony C's Creole seasoning because two stored I went to here in Springfield MO did not have Cajin seasoning. Is there much of a difference? I put this into my Dutch Oven in the Oven at 250 and stewed from around 8am till we got home from Church just after noon. The top looked dry at first but one stir with the spoon and it was perfect. Next time I will go ahead and add the sausage at the beginning so we don't have to wait after Church. I sent some home with my daughter, and am now waiting on SIL opinion. Red Beans and Rice is his favorite dish.

Hamburger Pie

This is an old BH & G recipe. I browned the meat in an iron skillet and used Bob Evans southwestern style potatoes (the kind in the refrigerated section of the market). I then stuck the whole skillet in the oven so I only have one pan to clean. Quick, easy and delicious. I have used mushroom soup with this as well. Corn is a nice addition.

Chocolate Cornstarch Pudding

Easy to make and nice chocolate flavor (I think). I got a little bold and decided to add come cayenne pepper (I love spicy chocolate). A quarter teaspoon is too much (It was a bit too spicy and only a little of the chocolate flavor came through). The next time I am feeling adventurous, I will try half that amount of cayenne. I will definitely make this again.

Buttermilk Pancakes II

My 6 year-old grandson insisted I come back here and give this 5 stars. We both loved them. I used 2 cups of whole wheat flour (I think it was the lighter color variety) and 1 cup regular flour. They were still nice and fluffy. He ate most of three rather large pancakes. They were sweet, with great flavor and very filling. The batter is rather thick, but i think that helps make a nice thick pancake. I now have a nice stack for a quick breakfast before church tomorrow.

Mom's Buttermilk Biscuits

These biscuits tasted excellent but there didn't seem to be enough moisture in them. The mixture was very dry. I was afraid of overworking them so maybe I didn't work them enough. Next time I think I will throw the ingredients into the food processor and see how they come out.

Slow Cooker Beef Stroganoff I

This was easy, but the canned soup made it salty. I can't imagine how much saltier it would have been with beef bouillon or onion soup mix. Once I mixed in egg noodles, some of the saltiness disappeared. Since I added fresh mushrooms, I may try the Healthy Request mushroom soup next time. It did take some tweaking before I got to the flavor I was looking for. I added some sweet paprika, then some garlic, then some sour cream, then (just a smidgen of dill and brown mustard). This seems to be a good basic recipe, but you'll need to season it to your taste. It seemed quite bland before that.
