Creamy Chipotle Chicken

I left out the butter as I felt it was not needed. I only used 1 tablespoon of the adobe sauce and it had a nice spice but not too hot. I did not put in the minced chipotle peppers at all. I removed the chicken and whisked the sauce to a smooth consistency. My husband just loved it. I spooned the sauce over oven roasted potatoes.

Danish Pastry

This is an excellent recipe. It is a time consuming, but the finish product is wonderful. I will make it over and over again as my family loved it. The idea of creaming the softened butter with the flour and then folding it into the dough was a great tip. I used my large kitchen aid mixer to do the kneading. I tried several different folding techniques. The dough is easy to work with. Thanks Cindy!

Cornucopia

This is a very challenging recipe. I made it with my daughter for the Thanksgiving table. It really takes two people. We made our own bread dough. I did not think that canned dough would work well. I had her boyfriend, Casey made a frame out of wire. We then covered the frame with foil and sprayed it with cooking oil. We weaved the strands together and entered in an extra strand as needed. It is important to keep a tight weave. It is import to work fast as the dough rises. We cut out shapes with a cookie cutter to hide big holes in the weave. We filled it with an assortment of vegetables with a dip on the tray. We will attempt to make this again as it is quite impressive. I attached a couple of photos of our work.

Spinach and Goat Cheese Salad with Beetroot Vinaigrette

This salad was a bit hit at our Family Reunion. I have also made it with arugula, spinach, romaine, and red leaf lettuce. My family just loves it. THIS SALAD IS A WINNER!

Cranberry Scones

I never made scones before, but I found the dough to be a bit fussy. I had to add more flour to make it a workable dough to roll. I rolled it into a 10 inch circle and cut it into 12 wedges with a pizza cutter. I added cinnamon instead of nutmeg. The scones had nice texture and flavor.

Banana Crumb Muffins

My family loved this recipe. They usually don't like banana muffins, but this was a real winner. I used margarine instead of butter. I made this recipe because I had so many overripe bananas. I found out from my sister in law that you can freeze mashed bananas to use at another time.
