Make-Ahead Mashed Potatoes
This recipe is fabulous. I've been using one like it for years without the onion salt and sour cream. One thing I did especially like was from member Connie who said they could be frozen. That is great. I have a toddler grandson who is crazy about mashed potatoes with anything you want to put on them so it will be nice to have some on tap when he comes to visit. I've never thought they tasted left over at all and not sure what you do to them to make them taste that way. A wonderful taste as well as a timesaver. Using the crockpot is huge, too, because the oven is as full as a Best Buy store on Black Thursday, especially on Thanksgiving. Thanks for all the hints, members!! You're included in the 5 stars.

Jalapeno Poppers of Champions
We do like these but the baking time is not long enough. I baked them for 40 minutes at 375F. on a rack and they were just right. This would have been 5 stars but for the baking time being so far off. Used regular thin sliced bacon and added 1/4 package of ranch dressing mix to the cream cheese. Next time I'll add garlic powder to it, also. Maybe garlic salt because, oddly enough, they seemed to lack salt. I only had 10 fairly large jalapenos and had enough filling for about 12 (24 halves). It doesn't work to overfill the halves because the cream cheese swells and the excess simply falls in the bottom of the pan. I was glad to be able to serve these without the breading and deep frying. Atkins dieters alert: This is a good appetizer for that diet. P.S. Removing seeds and membranes from your peppers gives you a pretty mellow product. Also, the longer they sit before you bake them the more mild they are. I think our 2 year old grandson would have eaten and liked these. You're left with only the flavor of the jalapeno, not the heat. I used lightweight rubber gloves to prepare these and washed my hands with soap with them on as I went from step to step. You don't want the pepper juice all over everything and it does burn if it gets in your eyes. Happy Football Season and thanks, Seahawks Fan

Czech Roast Pork
This recipe is wonderful. I made it yesterday because my son and grandson were coming for dinner and they like roast pork. Bottom line? There was about enough left for 2 skimpy pork sandwiches. Wonderful flavor and dark gravy that was a delight on garlic mashed potatoes. We also had baked squash and cottage cheese/pineapple salad. I tried to follow the directions as closely as possible but had to substitute cardamom for caraway. A site I read said that cardamom was stronger than caraway so use half the amount, which I did. I love the flavor of cardamom so next time I'll use the full measurement. I always have cardamom on hand because I make jul brod for Christmas. They also suggested dill seed as a sub. Time got away from me so I had to roast it at 375F. and an hour shorter time. I ended up putting all the beer plus a little water in the pan to keep it from drying out (thus, the dark brown gravy)and it was all just wonderful. Thanks to whoever submitted this recipe because it's a keeper!
