Colleen's Slow Cooker Jambalaya

I needed an easy dinner for guest arriving at staggered intervals. This was perfect. Everyone went back for seconds. I sauteed my shrimp in olive oil and butter and added it at the very end.

Grilled 'Fusion' Pork Chops

Chili-Lime Chicken Kabobs

These were so easy and so good. I did use fresh minced garlic and onion. I discovered at the last minute that I was out of chili powder so I used taco seasoning. Everybody loved them. This recipe is a keeper.

Lemon Cloud Pie II

I made two pies one "Key Lime Pie VII" and the Lemon Cloud Pie II. The Key Lime was excellent, but I received rave reviews for the Lemon Cloud. It was the hands down favorite. It is a bit of work to make but well worth the effort. I was somewhat suprised by how much the meringue expanded in the pie dish.

Brown Sugar Pudding Cake

Very good. One heads up the receipe say to mix all of the sauce ingrediants and then add 2 cups of boiling water. The flour will separate. Best to mix the flour with the melted butter as your first step. The stuff looked pretty scary floating in the pan but it baked up with a wonderful thick sauce. I used walnuts and served it warm topped with fresh whipped cream. Ice cream would also be great.

Shrimp Scampi Cheesecake Appetizer

Wonderful! I fixed this for New Years Eve it was the hit of the night. I will definitly make this again. I useed regular Gouda as some of the reviewers suggested and put garnished the puff pastry version with 2 large shrimp each. I had enough left over to do 30 small phylo cups to bring to another get together the next day. They were a hit all over again.

Rockin' Rhubarb Pie

The flavor was great. I used fresh rubarb and followed all of the instructions, but after the 45 min baking time my pie was nowhere near done so I baked it until the crust was golden approx 30 minutes more. The consistency was too thin. Next time I think I may try either doubling the flour or using tapioca to thicken the custard.

Lasagne Verdi al Forno

WOW! The best lasagne I have ever made. My husband said it was the best he ever ate. I really struggled with the pasta, it was probably not thin enough, but it had great flavor. I will porbably resort to store bought noodles next time.

Lemon Pudding Cake I
