Educator with a busy schedule - all my kids are out of the nest (mostly) so i want to keep dinners quick and easy for me and my husband, but I also want to have leftovers for lunch - so no "cooking for 2" for me!

Christmas morning eggs, ham and coffee cake. Corn Pudding and Broccoli Rice and cheese casserole at Holidays.

Baked Pork Chops with green chili topping - fabulous! One of my recipes was in 500 More Low Carb recipes by Dana Carpender!
My cooking tragedies
When I first started cooking with fresh herbs, I accidentally added a HUGE amount of cilantro instead of parsley to Hippie Style Stuffed Eggplant = the whole thing tasted like "Lemon Fresh Joy" detergent!

Easy Pumpkin Muffins
These are some of my daughters' favorite muffins. I have a child who doesn't love overly sweet desserts and these mild and moist muffins are perfect for her! I love them topped with a cream cheese icing, but she eats them plain. Easy, fast, and delicious!! I use pumpkin pie spice to make it even faster! In fact - I'm baking a batch today in Halloween liners to send in her care package to college!

Cajun Chicken
Delicious! I slice my chicken breasts horizontally instead of pounding them (too much work!) - I cooked part of them in the oven and part on the grill. When I put them on the grill, I got LOTS of fire from the vegetable oil - so my chicken came out a little grey from the smoke. Still tasted great, just didn't look too good. The chicken I cooked in the oven came out great - 375 for 30 minutes! I will definitely make this again!
