Pumpkin Waffles with Apple Cider Syrup
I made these waffles for brunch over the weekend and agree that the waffle itself is lacking a little something. It really is not that pumpkin-y. I did make the syrup to go with it and everyone seemed to enjoy them so I will make them again but will definitely try to up the flavour somehow. Also, if you're using a Cusinart waffle iron, I found that setting it on 4 was perfect (5 left them burned). If you're planning to make and reheat/toast later, I would cook them at a 3.5.

Amazing Pecan Coffee Cake
I made this cake on the weekend when I had my in-laws over for brunch. It was good, but not mind-blowing like others described. I made it in a 10-cup bundt pan and the cake only rose to fill 2/3 of the pan so it was a little small for the bundt. I baked it at 325 for 50 minutes which was perfect. I coated my topping with flour so I didn't have any issues with it sinking to the bottom (I layered it in the middle). I also reduced the sugar to 1 cup as I added a salted caramel glaze to the cake and didn't want it to be too sweet. Overall, a good cake and one that I would make again. I definitely agree that it tasted better the day after!

Sturdy Whipped Cream Frosting
Okay, I must admit I was VERY nervous about making this frosting for my husband's birthday cake. I read through the majority of the reviews and became more and more concerned about whether or not the recipe was going to work out! But I'm happy to report it was SO easy! I did make a few changes based on what I read in the reviews: 1) I used mascarpone cheese instead of cream cheese to avoid the cream cheese flavour; 2) I used icing sugar instead of regular white sugar; 3) I chilled my Kitchen Aid bowl and whisk in the freezer for an hour before; 4) I chilled the cream in the freezer for 20 minutes prior; 5) I added in half a packet of gelatine but I honestly don't think I even needed it. It turned out amazing! Fabulous flavour and so creamy and spreadable. Very sturdy.
