Peanut Butter Chocolate Chip Cookies

I doubled this recipe. I also made a couple of changes; like many others, I used creamy peanut butter, because I had it on hand. I also happened to have some unsalted dry-roasted peanuts so I chopped 1/2 cup in my food processor. For a double batch of cookies, I really could have added a whole cup. I also quickly whirred the oats in the processor, just because my son doesn't like them. (You can still taste them, but since he couldn't see them, he liked the cookies) I also refrigerated the dough for a couple of hours and used a mixture of reeses pieces and m&m's instead of chocolate chips. I used a small heaping cookie scoop to portion the dough and the cookies were done in 11 minutes. Mine may be smaller than the recipe specifies (but still a pretty good sized cookie) and I ended up with more than 24 cookies.

Amazing Italian Lemon Butter Chicken

I made this last night, following the recipe as written (except for one small thing, I cooked the bacon first, drained most of the fat, then added the mushrooms, artichokes, and capers.) It was really great. Everyone but my super picky son ate it and really liked it.

Exquisite Pizza Sauce

Wow, great sauce! I doubled it (everything except the honey, if not doubling the recipe I would 1/2 it) and it came out really great. I had a jar of anchovies, rather than anchovy paste, so put a tsp of minced garlic in a pan, added 5-6 anchovies and cooked it over low heat, smashing the anchovies with a wooden spoon. The anchovies don't make the sauce taste "fishy" at all, but add a lovely nutty undertone that's really great.

Turkey Tetrazzini I

This came out really good. I added a little diced garlic and extra cheese. Also, I didn't have the pimentos so I used some chopped up roasted red pepper. I think it tasted even better the second day.

Self-Filled Cupcakes I

Great flavor. I tried a different method and just put the cream cheese mixture on the top of the cake batter and had hoped it would sink under as it cooked. Unfortunately, my plan didn't work. But, they still came out great. I am planning on frosting them with a little chocolate frosting and then using some leftover cream cheese frosting to make an "x" across the top. (Like marking my not-so-buried treasure).

Spicy Grilled Shrimp

The spices were just right for this recipe. It had a really good flavor. I did leave the shrimp in the garlic, salt, spice mixture to marinade for awhile and then I added the lemon juice shortly before cooking (if seafood is left in an acid for too long it can get mushy). Furthermore, I used my George Forman grill to cook the shrimp; it is winter and I was too lazy to stand in the garage with the regular grill. It only took about 2 minutes for the shrimp to cook. through.

Cinnamon Bun Scones

I am not a very good pastry cook, but these came out wonderful. I used a metal potato masher to mix the butter with the dry ingredients and it worked pretty well. I also added a little vanilla to the glaze... I love vanilla.

Butter Crescents

I am AWFUL at rolling out dough... making biscuits or rolls but these came out great. The dough rolled out really well and wasn't at all sticky. Plus, they were even better the second day, reheated in the microwave or toaster oven.

Roquefort Pear Salad

This recipe came out great. I didn't have the roquefort so I substituted gorgonzola cheese. I don't really like mustard and when I first tasted the dressing I was afraid I wouldn't like it, but when mixed with the other salad ingredients it was really great.

Cinnamon Sugar Butter Cookies II

Pineapple Upside-Down Cake II

This cake came out great. It sounded a little complicated, but was really easy. I didn't even have the right sized pan, but it was still good. I used a can of crushed pineapple that I drained really well, and used the pineapple juice instead of milk. Plus, I sprinkled some chopped walnuts on top of the butter-brownsugar mixture on the bottom of the pan. It was great!

Award Winning Soft Chocolate Chip Cookies

These are the best, softest chocolate chip cookies. I usually scale the recipe to half, just because I am too lazy to stay in the kitchen that long, and the scaled recipe comes out great.
