Ronaldo's Beef Carnitas

The long roast time is worth every minute as it produces the most tender and flavorful meat. My only change is that I dont use canned chopped green chilies. Instead I use the flesh of one or two jalapeno sans seed or pith. I also grind my own cumin seeds which I grow as corriander in my herb garden.

Rich Chocolate Cake I

I was curious about the low ratings... I can't see why anyone would even attempt to even make this recipe. it does not have the correct ingredients even for a decent chocolate cake!

Rhubarb Strawberry Crunch

I went against every instinct of my baking experience to make this dessert. It is too sweet and too fatty. The natural sweetness of the fruit was masked (overwhelmed) by the sugar. I also found the crunch texture cookie-like, not at all like a true crumble. I had even increased the amount of fruit by 1/3 and still the sugar was too much. I think instead of modifying this recipe I would recommend using another recipe all together!

Pear Bread II

I was very disappointed in this recipe.I used several recommended substitutes like the apple sauce instead of oil. Pear flavor never came out. It was moist and had great texture but the flavor was not as impressive as I expected. I used fine quality ripe bosc pears. I think perhaps the apple sauce diluted the pear flavor. I think next time I will try half the recommended amount of oil and leave out the apple sauce altogether...

S.C.A. Trail Bread

Hello fellow SCA!!! Good recipe for crew though I have made this basic recipe, I use whole wheat flour for half of the bread flour called for in this recipe. For added nutrition, I also add 2 tablespoons of flax seeds, and my crew gobbles this stuff. Yum!

Magic Cookie Bars from EAGLE BRAND®

A cookie swap must! These go faster tban lightening!! Variations: use white choclate with dollups of raspberry preserves, or I use an oreo cookie base with peppermint oil added. Another, use bittersweet chips to play off the richness and add depth to chocolate flavor.

Chicken Breasts Pierre

Great chicken dish! The ingredients in the sauce work to create a nice meld of hot and sweet, not too tangy as I thought, because of the vinegar. I served this over rice with salad. Everyone loved it!

Chicken Paprika

This recipe is quick and simple enough to make however, both my husband & I thought it was bland. Dispite the searing of the chicken to seal in juices, before it was cooked for 10 mins. in broth with spices, the chicken turned out tough. I believe it needs to cook longer to tenderize the chicken.

Doreen's Superbowl Sandwiches

I made this recipe with only two alterations. First, I added along with recipes ingredients, red bell peppers and some home-made Emeril's Essence. Second, I used a cracked wheat bread recipe from King Arthur Flour, made in the dough cyle of my bread machine. What resulted was a delicious comfort meal for a cold New England Winters' night! Served with a light fruit salad, yum.

Creamy Potato Leek Soup II

A very delicous soup. Easy to follow instructions. It felt sinful to eat because of it's high fat content. A lower fat alternative I have tried to the bacon is smoked ham and milk instead of heavy cream. Sauteing the leeks is key to good flavor.
