Spiced Sweet Roasted Red Pepper Hummus

FANTASTIC! I did roast the red pepper myself, because I couldn't find any jarred ones at the store. [Method: I cut off the stem of one red pepper, then cut it in half, cut out the ribs and smashed it as flat as I could. I put it under the broiler on a piece of foil for about 7 minutes (your mileage may vary). Once it was nicely blackened, I took it out and put it in a ziplock baggie for about 15 minutes to steam. When I took it out, the skin peeled off very easily.] I also added a small amount of oil -- maybe 1 tablespoon -- to help thin it out a bit, as it was VERY thick.

Sour Cream Coffee Cake

Delicious! I left out the pecans (didn't have any) and added a layer of sliced apples in with the filling. My husband and I both loved it -- will definitely make again!

Good Old Fashioned Pancakes

Everyone in my family loves these pancakes. I like them because not only are they yummy, but they're super easy to make, and they hold together well, even when you drown them in syrup!

Grandmother's Buttermilk Cornbread

This is my new go-to cornbread recipe. It's DELICIOUS! Nice and sweet (I'm a Midwesterner!), and easy to make. Everyone from my husband to my toddler loves it.

Pumpkin Cake III

Oh my gosh, was this ever fantastic! I made it for a small get-together after my daughter's baptism, and everyone, kids and adults alike, LOVED it. Even my rather picky MIL raved about it! The only change I made was to add 1 extra teaspoon of cinnamon. Also, I baked it in a bundt pan -- I think it took about 45-50 minutes. I iced it with the Bourbon Cream Cheese Icing recipe from this site -- yum!

Bourbon Cream Cheese Frosting

This was fantastic -- everyone who tried it raved about it! I used about 3 tablespoons of bourbon and 3 tablespoons of milk to make more of a glaze, as I wanted to drizzle this over a bundt cake. I definitely agree with the other reviewers that 2-3 T of bourbon is plenty, and any more than that will make the frosting too thin to spread (if you're looking for a more spreadable frosting rather than glaze).

Slow Cooker Chicken Marrakesh

This was fantastic -- my husband and I both loved it, and even the 2-year-old ate a bowl! (The 4-year-old didn't, but he's like Mikey -- he hates everything.) I didn't need to add any additional liquid, though next time I may increase the spices a bit.

Slow Cooker Tapioca Pudding

The pudding tastes OK (I did add a little vanilla and salt), but the texture is just grainy. (I used whole milk and whole eggs, FWIW.) I'll eat it, but I won't make it again.

Old Fashioned Chocolate Cake

I made this for my husband's birthday, and he ADORED it. I'm not a big chocolate cake lover, normally, but I loved it, too. The cake was very moist and delicious, and the frosting was just fantastic! (We did leave out the pecans, because he doesn't care for them, but otherwise made the recipe exactly as written.)

Hudson's Baked Tilapia with Dill Sauce

My husband, toddler son and I all loved this! The tilapia was cooked perfectly, and the dill sauce was fabulous. My husband said it took him back to college, when a local pizzeria served bread sticks with dill sauce. We may even just make the sauce sometime as a dip!

It's Chili by George!!

My husband and I loved this recipe! It made lots of very tasty, very thick chili (we used the diced tomatoes instead of the juice, as others recommended). It was very filling and had a nice amount of spice -- my husband isn't nuts about super-hot food, so we thought it was just right.

Chocolate Butter-Creme Frosting

I used this recipe to frost my husband's birthday cake, and we both LOVED it! It was delicious and very easy to make, and best of all, didn't have that nasty, mouth-coating texture that a lot of buttercream recipes (usually the ones with shortening) have. I will definitely be making this again!

Alison's Slow Cooker Vegetable Beef Soup

My husband and I were very happy with this stew (it is definitely more of a stew than a soup). I was lazy, though, and instead of using one bag of frozen veggies and two potatoes, I just used two bags of frozen stew vegetables (including potatoes). Turned out great! I thought there was a bit too much pepper in here, though my husband disagreed.

Berries and Cream

This came out a little too thick and too bland for me. I tripled the sugar and wine and was happy with how it came out. I made it with raspberries and blueberries (no good strawberries were available), but I use strawberries in the future. The blueberries weren't sweet enough to taste right with the cream.

My boyfriend and I loved this! It was incredibly easy to make (and I'd never even cooked fish before) and tasted great. Hint: If you don't have a garlic grater, peel the garlic and stick it in the blender on "chop."
