Spinach and Strawberry Salad

I've been using this recipe for several years as my standby salad recipe. I usually don't have sesame seeds on hand and I flip-flop the oil (I use olive) and vinegar (red wine vinegar). I make the dressing ahead and let the strawberries marinate in the dressing...unsweetened frozen strawberries can easily be used when you make it this way. Just pour the dressing over the spinach immediately prior to serving!

Beth's Spicy Oatmeal Raisin Cookies

I've been making these for 7-8 years now. Oatmeal Rasin is my all-time fave cookie and this is my "go to" recipe! As other reviewers have suggested, I use all butter as well.

Cheesecake Cookie Cups

As another reviewer recommended, I baked the cookie part for only 6-7 minutes. I served these with caramel, hot fudge, and Cool Whip and they were a hit!

Self-Filled Cupcakes I

I really liked the flavor and idea of this recipe, but I didn't like the way that the "filling" sunk to the bottom. I thought about baking the 1/2-full cupcakes for a few minutes first (just long enough for the batter to set up), then the cream cheese mixture followed by the remaining batter, then finish baking them. I'm not sure how this would work, but I think the cream cheese layer would keep the very bottom from drying out. They were very moist when I made them and they actually soaked through the paper muffin wrappers. I used some foil wrappers as well and those looked much better.

Chicken Cordon Bleu I

I used processed pepper jack cheese, garlic flavored breadcrumbs, and leftover honey baked ham from Easter (this was because of several reviews stating that the recipe was good, but a little bland). I also made the honey mustard sauce from the "Aussie Chicken" recipe on this site (as recommended by other reviewers, but I left out the corn syrup and used sour cream instead of mayo). I will try "real" pepperjack cheese next time--I only had the processed kind on hand. My husband LOVED this recipe and told me that he is looking forward to the leftovers as am I!!

Chocolate Oatmeal Drop Cookies

Loved the recipe and the only change I made was milk chocolate mini M&Ms instead of the semi-sweet chocolate chips. It resulted in a much more colorful final product!! These cookies literally disappear every time I make them!!

Slow Cooker Taco Soup

Loved the recipe!! I recommend using regular taco seasoning instead of mild. I have tried it both ways and find the regular to be much more flavorful.
