Favorite Old Fashioned Gingerbread

We added red hots (cinnamon imperials) before baking. They added a wonderful flavor! However, they sunk to the bottom and melted. Next time I'll wait until halfway through baking time and then adding them.

Baked French Fries I

These fries are excellent! The only problem I have with them, but it happens every time I make oven fries, is that they aren't crispy enough. I put them under the broiler for the last 3 minutes of baking and that seems to help. I also added Lawry's seasoning salt to these fries. Wonderful flavor!!

Spicy Tuna Fish Cakes

Eat your heart out, crab cakes! I made sure to strain all the juice out of the tuna so they wouldn't be soggy. I used instant potatoes instead of taking the time to peel, slice, boil, and mash. The flavor of these cakes was excellent, but next time I think I will replace the cayenne pepper with a few dashes of hot sauce.

Cilantro-Lime Dressing

I really dislike the taste of cilantro, so I went light with it in this recipe. I also decreased the amount of honey, like so many else have. What a great flavor!! I will definitely make it again.

Beer Butt Rosemary Chicken

I have used the orange slices & rosemary, and have roasted the chicken with just beer & spice rub. It turns out juicy and tasty either way. A great way to cook a chicken...not to mention quite a presentation when it comes out of the oven!

Easy Banana Brownies

I tried making some changes that did not turn out so well. First, do not use more banana than this recipe calls for. Second, do not substitute wheat flour for the white. The flavor was not good. I will give this a try again with the original recipe and then re-rate. I always end up with overripe bananas in my house so it's good to have a way to use them.

Unbaked Chocolate Oatmeal Cookies

Excellent!! I love how quick and easy these are. I didn't have enough oats for a full batch so I halved it and they turned out a bit too dry. Will make a full batch next time...otherwise they disappear within minutes!

Whoopie Pies VIII

I made these for my husband for Valentine's Day. He couldn't get enough of them! So good, moist and delicious. I only made one change to the recipe...instead of 1-1/2 cups of butter in the filling, I used 1 cup of butter and 4 oz. of cream cheese. I also misread the directions and put the egg whites in without beating them so did that after they were in the filling mixture. Will DEFINITELY make these again!!

Chicken and Dumplings III

I used pulled chicken breast that had cooked in the crock-pot for several hours. Since it also had some rib meat to help flavor it, I just used water to cook it, then added fresh thyme and rosemary for flavoring. As many others did, I added fresh veggies (carrots, peas, onions, garlic, & corn) to the sauce. I only had cream of chicken soup but that worked wonderfully. Instead of refrigerator biscuits, I just made a batch of biscuit dough with Bisquick and dropped it on top in little pieces. Cook 10 minutes with lid on, then 10 with lid off and VOILA! an easy-peasy, fairly nutritious dinner!

Easy Pleasy Mac N Cheesy - US Navy Style

I made a HUGE batch of this mac n cheese...enough to fill an entire roaster pan. My husband is quite a connoisseur of mac n cheese, and he told me this is some of the best he's ever had. I'd call that a glowing recommendation!!

Pumpkin Whoopie Pies

The Whoopie Pies VIII is a better recipe. These cookies baked up small and round, no doubt because I had refrigerated the dough for quite awhile before baking. I would also use a cream cheese-type filling as this one is really too sweet. Still mighty tasty!

Pizza Casserole

I added green olives, used seasoned pork sausage instead of ground beef, and added a little bit of seasoning. I layered it in a 9x13 pan with the noodles at the bottom, meat & veggie mixture in the middle, then sauce and topped with cheese. Awesome!

Shrimp and Crab Bisque

This is our new Christmas Eve favorite! I tripled this recipe and made it in a slow cooker so it could cook while we attended services. I began by melting butter, sauteeing onions until translucent, then added regular sherry (1/8 cup per serving) and added it at the beginning so the alcohol would cook out. I mixed all the seasonings into the flour and then added to the butter mix to start the roux, then added fat free half n half to thin it. We had imitation crab legs on hand, so I chopped those up in the food processor, added everything to the slow cooker along with milk and vegetable stock until it was at the desired consistency. Finally, for the Iowa in all of us, I added some corn. I served it with cheddar biscuits and it was PHENOMENAL!! We will be making this every Christmas Eve...a new family tradition!
