Cheesy Ham and Hash Brown Casserole

Reviewed: Feb. 20, 2014
Absolute YUM!! Comfort food at it's best. The only thing I did differently was to make my own hash browns (I chose this recipe in part to use some potatoes I wasn't using quickly enough!) My husband URGED me to be sure and add it to my recipe box and rate it highly.

Stuffed Beets

Reviewed: Nov. 16, 2013
I was preparing stew & these stuffed beets for dinner. It took me almost the full two hours the stew was simmering to prepare the stuffed beets. I followed it precisely to the recipe. They were tasty, but didn't capture my attention. I felt like it needed a stronger flavor inside and some crusted cheese (parmesan?) on top.

Pumpkin Cookies I

Reviewed: Nov. 3, 2012
This recipe was delicious! I confess I discovered after starting the recipe that I didn't have shortening so I substituted butter. I was afraid the consistency wouldn't be as good. It wasn't as fluffy as it might have been if I'd been able to use shortening but the flavor was fabulous. My husband doesn't like butterscotch chips - he LOVED this recipe! Thanks for sharing it, MJ!

Peppered Meatballs

Reviewed: Jul. 16, 2012
I love the savory sauce as an alternative to the "usual" sweet, BBQ style sauce with meatballs. I made it on the stove top (used frozen meatballs so I can't comment on that part of the recipe) and found it easy and quick. Definitely going in my recipe box!

Slow Cooker Lemon Garlic Chicken II

Reviewed: Nov. 15, 2011
Wow! delicious, succulent, flavorful. I used one large chicken breast cut in half, and then halved all of the ingredients. I didn't modify their proportions, just exactly half of everything. I cooked it in my VERY small crock pot for about 3 hours. Fabulous!

Glazed Corned Beef

Reviewed: Mar. 16, 2011
The only modification I made was to boil the CB first. My husband couldn't imagine eating corned beef any way other than between two pieces of bread - he was thoroughly impressed with this recipe!

Slow Cooker Chicken Stroganoff

Reviewed: Aug. 17, 2010
This was delicious EXACTLY as written. Many previous reviewers didn't believe that it could be cooked with only butter for hours but it was amazing and the gravy becomes much thicker by only cooking it on high for the last half-hour. Don't change it! I also tried this on the stove-top as I realized I hadn't prepared enough for the number of people coming over. I did things in the same order (chicken, butter & Ital mix first, then cream cheese/soup mixture) and it also turned out great, though the gravy wasn't quite as thick. I then mixed both batches together. This is a nice alternative if you forget to start it in time and still want to serve this delicious dish!

Red Velvet Cupcakes

Reviewed: May 13, 2010
This is such a smooth batter and absolutely delicious. My husband is not a fan of desserts, but he walked out of his home office drawn by the smell of these cupcakes. He ate one and offered to help with more! I didn't try the frosting as I had my own already prepared. (it's why I was making the cupcakes!)

Death By Chocolate V

Reviewed: Oct. 18, 2009
It was a tasty cake, and chocolatey. Fairly easy to make (I didn't have the best sifter for the dry ingredients.) Given that it was made with sour cream, I expected it to be more moist than it was. I felt like I could taste the flour almost more than the chocolate.

Home-Made Cream of Chicken Soup

Reviewed: Jun. 21, 2009
Good substitute for canned soup. (especially in Central Asia where I can't get it!)I added more flour later, next time I would probably make it with 1-2 more tablespoons of flour from the start (and maybe another tablespoon of oil?) to make it the consistency of the condensed soup. substituted half of milk with chicken broth, didn't use garlic, salt or sugar. It was nice and thick, but half the recipe was not quite 2 cans-worth of soup.

I used less oil and it was still tasty and the salt stuck!
