Easy Mac and Cheese Muffins
These turned out great, with a few tweaks recommended by other reviewers. I used 3 cups of sharp cheddar and no mozzarella and added paprika, salt, pepper and dijon mustard to the mixture. I always use dijon mustard in my regular mac and cheese - it might seem strange, but I think it really makes a difference. I also sprayed the tops of the muffins with Pam toward the end, because the bread crumbs weren't turning golden brown on top. The Pam did the trick. I made regular sized muffins as well as mini muffins (baked for 10 minutes instead of 30). The only thing I would do differently next time is not use muffin liners for the large muffins. They really stuck to the muffins and were hard to get off. This wasn't as much of a problem with the mini muffins for some reason. Overall, a fun and tasty party snack!

Carrot and Ginger Soup
I have made this a couple of times and I love it. It's so simple and delicious. I have not made many tweaks to the recipe because it's wonderful on it's own, but I use a little bit of skim or 1/2% milk rather than heavy cream, and it still adds the creaminess I like without the fat. I'm tempted to add some butter, but it's so much healthier without and it's wonderful as is. Thanks for sharing!

World's Best Lasagna
Awesome lasagna! I think the sausage really makes it. I didn't add any salt, as many reviewers said. I also ended up adding some extra ricotta (maybe 20-22 oz total?) because I ran out of filling in the middle of the second layer. I used fresh lasagna noodles, which you do not have to cook in advance - and the layering in this recipe helps, because the sauce cooks the noodles well. I also used fresh ricotta and mozzarella from the Italian pasta store - way better than Polly-O. I mostly stuck to the recipe, though, aside from the salt and extra ricotta. The only issue I had with this recipe is that it's super messy lasagna. I think there could have been smaller layers with more noodles so that it holds together more. I will do this next time (and there will be a next time). However, the flavor more than made up for the issue.
