Rosemary Roasted Turkey

Every year for Thanksgiving my Father roasts the turkey and this past year for Thanksgiving I was brave enough to take on the challenge. This Rosemary Turkey recipe was by far the best turkey that my family has ever tasted. I was praised for a job well done and asked to do the turkey again for Christmas that same year. The turkey was perfectly cooked, moist, tender, extremely flavorful. Before making this turkey I researched/read many of the reviews and I decided to put my 12-lb. turkey in a 2 1/2 day brine. The brine consisted of freshly juiced lemons and oranges, peppercorn, freshly chopped basil and rosemary, brown sugar, salt, and water. Thanksgiving day I rubbed the olive oil mixture that I made the night before all over the turkey and under the turkey skin. Then, I stuffed it with 2 halved lemons and onions, 8 cloves of pounded garlic, and four sprigs of rosemary. I HIGHLY RECOMMEND this recipe to anyone who is cooking turkey for the first time! It was such a great recipe! It's perfect for whole chickens tOo! I can't wait till next Thanksgiving!

Day Before Mashed Potatoes

I read most of the reviews before making dish and saw that people didn't really do the "day before" part and just did it the morning of, so I did the same thing. It was different from the traditional mashed potatoes that I'm used to. However, it was a GOOD different and I will definitely be using this recipe again.

Sauteed Green Beans

For my version of the Sauteed Green Beans I used an entire package of Turkey bacon, a large Vidalia onion, and 4 cloves of garlic all sauteed in one pan. I then added 2 thoroughly strained frozen green bean packages and 1/2 cup of toasted halved almonds. This was a hit during dinner!! It was light and extremely flavorful.

Awesome Sausage, Apple and Cranberry Stuffing

This is by far my favorite stuffing recipe to date! I added 1/4 cup more dried cranberries and 1/2 of an apple because those two components made the dish for me! This dish has been a huge hit on all the dinners I've made it for. I highly recommend it!

Easy Turkey Gravy

This gravy was the perfect combo to my Rosemary Roasted Turkey. However, I recommend that you only use only 1/4 of condensed cream of chicken soup can because it made the gravy a bit salty for my taste. The second time around it was perfection.

Pecan Turtle Bars

This recipe was so delicious!!! Instead of using pecans I used halved almonds that were equally as good. Also, I used different chocolate chip toppings for each of the batches that I made one dark chocolate, one milk chocolate, one white chocolate, and one peanut butter chocolate. The white chocolate one was my favorite and I highly recommend using it!

Easy OREO Truffles

This was a huge hit during Thanksgiving dinner so I made a few batches for Christmas dinner and presents. Instead of using an 8 oz. package of cream cheese I used a 12 oz. tub of whipped cream cheese, in addition I added 4 drops of pure vanilla extract and 1 tablespoon of milk with the whipped cream mix. Instead of using baker's baking chocolate I used hardening chocolate for ice cream, it was alot easier to cover the Oreo balls that I individually laid on mini cupcake holders. I made different variations and decorations on each batch for a nice arrangement of truffles.

Balsamic Bruschetta

I love bruschetta!! This has to be one of my top three favorite bruschetta recipes that I've tried thus far. Similar to others I've added extra Parmesan cheese. Also, I added Italian seasoning and served it on a garlic herb Panetini. It was a huge hit during the holidays!

Baked Asparagus with Balsamic Butter Sauce

You can never go wrong with baked asparagus! This was easy and fun to make. I tripled the recipe since I had two huge bundles of asparagus. The one touch that I added to the recipe was 1 tablespoon of honey mixed in the with butter, soy sauce, and balsamic vinegar sauce. The honey added a pleasant contrast to the other ingrediants.

Apple Pie by Grandma Ople

This apple pie recipe was a huge hit!! I've never made pies before and since I had an abundance of apples I figured why not make pies out of them. The directions were very simple. Prep time took a while since I had so many apples to core, peel, chop, and blanch. I made 6 pies in total for my first time out and I also had alot of apples left over for my own apple chutney and strudel recipe. I highly recommend this pie served ala mode or with a nice warm apple cider, whichever is your preference.
