Delicious Ham, Potato, and Leek Soup

I made some substitutions (well... additions really, namely leeks) and doubled the recipe, so I can't *really* vouch for it as written, but I highly doubt that it would disappointed even if you followed it to a "T." Excellent soup... I couldn't be happier (especially because I had a tooth pulled today and needed something easy to eat!) It was easy to make, though I ended up on my feet kind of long due to the chopping portion (adding the leeks didn't help that), but otherwise it was a snap!

Cookie Dough Hummus

I'm not entirely sure why I even tried this being that I don't like raw cookie dough, but it was pretty good for a "sweet" hummus. My sister liked it a lot (she's a fan of cookie dough ice cream). I don't think I'll make it again, but I would suggest it to someone who was interested in a more healthy, savory, sweet snack.

Chewy Strawberry Oatmeal Cookie Crumble

I read the comments and cut the sugar down drastically, added a little cinnamon and all spice for some extra flavor, and used Maple Syrup organic oatmeal packages... what I ended up with left a *lot* to be desired. I'm guessing you need a good deal of sugar in the first step in order to get the egg mixture to the consistency that it needs to be to cook correctly. I'm not sure what purpose the additional 1/2 cup would serve as far as "baking science" goes (i'm not educated), but next time I try these that is *all* I'm going to cut out. If you think it's going to be too sweet, I'd suggest using plain quick cooking oats or some other less-sweet variety than what some of the Quaker packages that most people use might have. If I didn't want to eat my Kashi oatmeal I'd try it with that, but 8 packages is too much to use on a potentially disastrous recipe! I might make this again... I have a lot of left over packages from a Costco variety box that I never got to (I was pregnant and didn't like any of it) and I've been running through recipes with instant oatmeal. This might be the best one yet, but that's really not saying much.

Twice Baked Potatoes

I made this for our Christmas dinner this year. My family likes spicy and these were pretty good but not as explosive as I imagined them (and talked them up) to be after reading prior reviews. I made some changes - I didn't have baking potatoes, so I used Yukon Golds and rather than re-stuffing them into the shells, since they're softer and not as "reliable" containers, I lined a casserole dish with the discarded skin pieces and layered the mixture on top. I added a few ingredients to mirror how I would build a "custom baked potato" based on what I had around the kitchen, and refrigerated the "once baked" casserole to re-bake the next day, making prep for a big family dinner much easier. The casserole was delicious and the leftovers were quickly eaten up. I will make this again!

Grandma's Gingerbread Pancakes

Made for Christmas breakfast. Doubled the spice, added some nutmeg and allspice. Added more baking sode to increase fluffiness as the previous reviewers stated (thank goodness!!). They ended up nice and fluffy, though they were still somewhat dense. I was disappointed in the flavor - I wanted something more pungently cookie-like. It was a nice twist, but didn't live up to my expectations.

Awesome and Easy Creamy Corn Casserole

I made changes as suggested in the reviews - cutting down the butter and eggs. I made this for our Christmas dinner and prepped it all a day ahead and reheated it. I don't know how it was on the first day, but it was EXCEPTIONAL with our meal. The left overs were welcome and gone before anyone got tired of them. I will make this again. I think there are more things that can be done with it, such as adding cheeses or peppers to make it more of a "southwest" flavor. My family will be asking for it again I'm sure!

Smothered Green Beans

Too much onion, not enough garlic or bacon flavor. The bacon and onions are too conspicuous - there's an overall good flavor, but the sizes of all of the pieces are too much in contrast. It would be better if it yielded some type of sauce to bind it together - I would try it again if I could find a way to use some type of garlic sauce (or something of that consistency) along with the rest of it.

Apricot Brown Sugar Ham

I used this glaze for my Christmas ham this year. I ended up with way too much glaze for my ham, though mine wasn't spiral cut, which may have made a difference. It was really quick and easy, and I was able to make the glaze a day ahead so the day-of prep was a snap, leaving me to actually enjoy the day with my family. I substituted a Peach Mango jam for apricot, and I think you could do a lot of experimentation with the jams/sweeetners to customize the dish to the rest of the meal.
