I made this recipe as written, the only exception was adjusting the time. I think it's wrong to judge this recipe harshly based on microwave times, as all microwaves are different, you need to watch. I found when I finished the 3 minutes it was already turning amber so I just added all my ingredients and stirred. I did not put it back in. It came out brittle, It's a little more opaque caramelly looking than I thought it should be, and I would have preferred double the amount of pistachios. Taste delicious. There are many versions of this recipe out there, including one published by the NY Times. The Times recipe has instructions to cook the sugar even longer.
