Creamiest Rice Pudding
This was perfect. I doubled the recipe as I was bringing it to an event. I've only made rice pudding a few times over the years, and it always seems like there should be more rice when you're making it, but then it kind of explodes...Do have to watch, and stir...good thing to make when you are doing other things in the general vicinity. Stirred it every 8 to 10 minutes. The double recipe made 5 quarts of rice pudding. The sweetness would have been perfect for me, but I was bringing it to a kid event, so I added a little sugar at the end and stirred in. Lots of compliments and requests for the recipe.
8/19/14 Just made it again for an event. Great recipe. I did want to note that the cooking time isn't totally accurate. It takes awhile for the milk to reach a simmer, you have to do it slowly so the milk doesn't scorch, then you should start timimg your hour of simmering after that. This time I needed to add 10 minutes to the simmering for a total of 70. Still delicious.
