Whipped Cardamom Sweet Potatoes
VERY tasty recipe, I love the cardamom with the sweet potatoes. I made this for Thanksgiving last year and it went fast, I am looking forward to having it again this year! You can even leave the butter out and it's just fine.

Chicken Enchiladas I
These are so good! Everyone loves them, and guests are always impressed that I know how to make enchiladas from scratch. Mexican dinner night used to be tacos or fajitas from a box, but these are infinitely better! The filling freezes well too....just pop leftovers into the freezer, and the next time you need a quick dinner, defrost, throw it in a tortilla, cover with sauce and cheese, bake, and people will think it took you all day!

Mom's Ginger Snaps
I usually don't like ginger snaps because they are too hard, but these guys are really yummy. I don't even bother to set the timer, I just check them periodically and once they begin to crack on top, I take them out. They will still be very soft and gooey on the inside at this point, but just let them cool on the cookie sheet for about 5 minutes, then move them to the cooling rack. You will think they have not been cooked long enough, but they will harden and flatten out as they cool, so they have to be super-gooey to begin with if you want them to end up chewy once they've cooled. I have made this recipe over and over, and it has earned a place in my personal cookbook!
