Pesto Polenta Lasagna

Polenta in this recipe was a great, healthier substitute for noodles. I also made some other changes to the recipe to make it my own and it came out very tasty and filling. I omitted the pesto and pine nuts and instead I cooked some chopped onion, garlic and spinach in a skillet and added some sliced up chicken sausage too. Turned out wonderful!

Eggplant Parmesan II

Healthy and delicious Italian dinner! I made a couple changes though as I only cook for myself and my boyfriend. Instead of regular bread crumbs I used panko, seems to make the breading hardier, which I like.I also only used half the recipr. Finally, instead of cooking in a casserole dish with sauce I simply put a spoonful of sauce and low-fat cheese on top of each cutlet after it had been cooked. I then popped it back into the oven to heat the sauce and melt the cheese. They came out wonderful and crisp!

Baked Potato Pizza

This recipe combined two of my favorite things: Pizza & Potatoes! I took the notes of others and did 1/2C sour cream adn 1/2C ranch. It was tasty and very filling!

Chicken Shepherd's Pie

Great recipe if you have leftover roasted chicken or turkey and mashed potatoes. My only suggestions are to pour a can of cream of mushroom soup in with the chicken and veggie mixture and make sure you bake in a shallow casserole dish as opposed to something like what is shown in the photo. I put my pie together in a deeper dish and it took forever to cook, but it turned out tasty!

Chicken Zucchini Casserole

Needed a little more flavor, but a great meal if you have a lot of random veggies that need to be cooked before going bad! Don't limit yourself to those in the original recipe. I added in green beans, corn, bell pepper, you name it.

Melissa's Turkey Meatloaf

This meatloaf was too moist. Next time I would take the other reviewer advice and omit the milk and instead of an entire can of tomato soup, just use a little ketchup on top!
