Pumpkin Butter

Reviewed: Oct. 15, 2011
Great way to make pumpkin butter. I will adjust the seasonings next time to our taste, but otherwise it turned out perfect. After sone research I found that you can can this in a hot water bath. Process quarts 40 minutes.

Easy Strawberry Lemonade

Reviewed: Jun. 13, 2011
Went over great! 2nd time I mashed the strawberries before adding. Everytime after that we pureed the strawberries and added Fruit Fresh to them the day before. The day of, the strawberry puree was in a bottle for everyone to add to their own like (If you pre-ad it seperates). We have also tried this with raspberries and both are equally great. Use the frozen berries as garnish if you want, but the lemonade won't last long enough for them to thaw. :)

Easy Slow Cooker Sweet and Sour Pork Chops

Reviewed: Feb. 12, 2012
Tasty and simple! After I had started the recipe I realised we were out of ketchup. Used a can of tomato paste plus a pinch of sugar as a replacement and it turned out nicely.

Slow Cooker Coconut Curry Chicken

Reviewed: Aug. 6, 2012
This was a good base curry recipe if you are starting to try curries. Loved the fact that it was made in the crockpot. We will make this again, but add more kick to it next time. Even the kids that do not like heat said that it was just bland. Don't get me wrong, it wasn't bland as in no flavor, it just needs a boost.

Stir Fried Kale

Reviewed: Jan. 1, 2012
Great recipe! The first time I made this recipe as is and it was perfect. This time, after I had de-ribbed the kale, I realised I was out of breadcrumbs so I made 2 small changes. First I added crushed red pepper to the garlic/onions & then I added 1 tbs butter to the kale in the last minute of cooking..Fantastic! You do not need to add water at all. Toss the kale around for a minute and it will wilt from the heat just fine every single time. I am not sure what a "bunch" of kale is because I pick it from the garden. If you have fresh the amount of kale to make enough to fill a standard veg-can (cooked) from the store would be enough to almost fill a grogery sack(raw).

Cuban Shredded Pork

Reviewed: Jul. 24, 2011
Everyone liked this recipe. I used a tenderloin, but will use a fattier cut of pork next time so that it will break down more, absorb more flavor, and get crispier. To make this a complete meal you really should serve it with Yellow (saffron) rice and black beans.

Parmesan and Basil Chicken Salad

Reviewed: Jul. 24, 2011
It was mixed reviews here and I think it always came down to the basil. Seeing as that can be tweeked to taste, the consistancy was still good the next day, & the ease of making it...I would recomend it.

Bolognese Stuffed Bell Peppers

Reviewed: Jul. 12, 2011
A do again and again! There was not one single complaint in this family of 4. Recipe made exactly 6 large peppers. The only things I did different from the recipe was... 1.)Blanched the peppers for 3 minutes. Next time I will blanch 4 minutes. 2) Added diced mushrooms and red onion. I had some that needed to be used up but this recipe would be great without them too.

Made 3 batches....blueberry wine, muscadine wine, & Asti Blanco. All 3 were awful to drink but made great jellies! Followed the recipe as directed and each batch turned out perfectly!! Great over cream cheese served on crackers.

Absolute Best Liver and Onions

Reviewed: Feb. 20, 2014
This was our first experience with liver and even then only because my son requested it. We all decided that this would be a once a year meal for us. We agreed we like the recipe it's just the liver we had issues with. :)

Corn Pudding

Reviewed: Feb. 12, 2012
Because I am not a "pudding" person I have always avoided this until now. It was fantastic, do not let the name fool you. Everyone in the house loved it and voted it a do again. I had corn on the cob in the freezer to use. I cut it off and ran half of it thru the blender. Worked great!

Canned Apple Pie Filling

Reviewed: Dec. 4, 2011
I followed the directions exactly and I am an avid canner, so I decided to give this recipe a try. I think this was an ok jumping off point, but at the same time the first batch was a waste of ingredients. The syrup set up as a jelly consistancy in the jar, but did not hold up in the actual pie. I would suggest reading all suggestions on here before following the directions as is. I made so many changes that I am not going to list because that would be an altogether different recipe.

Marinated, Breaded Lamb Chops with Rosemary and Garlic

Reviewed: Jul. 24, 2011
Made these tonight and they were ok. I think the problem was the chops we had (gamey), not the recipe. Had no problem with them getting crisp, but I put the pan in the oven as it preheated, then added the chops once the oven was ready. I used half the Worcestershire as several other people suggested.

Watermelon Lemonade

Reviewed: Jun. 1, 2011
Wonderful!!!! Even the people that thought it didn't sound good LOVED it! Instead of making the syrup I deseeded & then pureed the watermellon, then added it straight. Checking the sweetness of the watermellon is a must. If it sets overnight you need to remember to stir because it will seperate. We also tried this with fresh peaches and that was a great twist too!

Paula's Polenta with Mushroom Topping

Reviewed: Mar. 4, 2011
Overall a good recipe and for sure a do again. I used a sifter to add the cornmeal to the water so that it would not lump, added about 1/2 cup parmesian and some fresh basil to the polenta before I spread it. The mushroom topping was great as is, but next time I may add 1 tbs of butter or splash of white wine right at the end to make it more of a sauce.

Everyone loved these! I made them with oyster crackers and followed the recipe exactly. Next time I think I will try to make them with Gold Fish like in the picture for a different twist.
