Chicken Zucchini Casserole

This recipe was delicious, I have been making Zucchini casserole for years now, which is almost the same as this recipe, but minus the chicken. I did make a few changes to the recipe. First I didn't dice the zucchini, I sliced it thinly, I also used one yellow squash. So in total I used 2 good sized zucchini and one small yellow squash. I put the thinly sliced zucchini and squash in a pan with the onions and carrots that I shredded thinly with my vegetable peeler. I cooked them in the pan with some salt, pepper, onion powder, and garlic powder for about ten minutes (I didn't think the zucchini would cook if it was cubed, and I don't like hard zucchini in my casserole). I boiled my chicken, and then diced it up, and put it in the pan with the veggies for a few minutes. I used 1/4 C of butter for the stuffing, and 1/2 C of chicken broth, I couldn't bring myself to use so much butter. I mixed everything together and put it in a greased 9x13 glass dish. I baked it at 350F for 35 minutes, and then on 400 for the last 5-10 to really make the top crunchy. It turned out soooo good!! My husband loved it, and he doesn't like zucchini. I will definitely make it again.

Absolutely delicious! I love that you used halved candy caramels instead of making your own, just a simple shortcut. Taste was great, and the consistency of the sauce was perfect.

Marinated Baked Pork Chops

This is by far my family's favorite marinade! Whenever we can't think of something to have for dinner, this is our go to recipe. I always double the marinade, so once the chops are cooked we have enough to pour over our egg noodles. Quick, easy, and amazing flavor!!

World's Best Lasagna

This Lasagna was great. I used only 1tbs of sugar, and added no salt to the sauce. I upped the ground beef to 1 pound, and used a little extra ricotta cheese (my husband loves it) Make sure you don't skip the fennel seeds, they really do add a lovely taste. Overall it was a great dish, I think next time I would cut down on the sausage just a little, the sauce was a little too sweet for my taste. Great recipe!
