I love baking , cooking too, but there's something special about baking.... I haven't found anything that I absolutely cannot make, some things are more challenging than others.. but for the most part...I please almost everyone...

Cheesecake is my specialty, if it has cheesecake in the title... I can make it..

In my many years of experience I have learned there are no tragedies in cooking/baking, only opportunities to learn from our mistakes... Of course I say that because there are far to many tragedies in my history to list on here

MMMMM... Brownies
I added an indeterminate amount of walnuts to the batter and on top just prior to baking. Also, I hand stirred with a whisk, adding the eggs one at a time. If you're baking in a darker pan, either lower the temperature 25 degrees, or bake for less time. These are amazing, and very chocolatey.

Classic Tiramisu
I have had a few marriage proposals over this one, some of whom were married... I did do a few things of my own though... I baked the lady fingers found in the bakery section until they were golden brown and brushed the coffe mixture over them instead of dipping them... it holds together much better that way.. and it's worth the effort to find marscapone cheese... I also make mine in a square glass baking dish instead of a triffle or springform... it's easier to serve that way...I recommend making this a day or two before you plan to serve it, the flavors mesh much better that way.. overall I'd say its well worth the time you put into it to get such a great dessert out of it.... thanks Carol!

Brownie Caramel Cheesecake
I have made this recipe 2 times now, and the first time was not as good as the second, I followed some tips like adding 2 tbs veg oil and that didn't help much, I also baked it for only 15 mins, it turned out burnt on the edges and to chewy to chew in the middle... the second time I made it, I followed the advice of the old standby.. Mom... Add an extra egg she says and put a pan of water in the oven with it.. So I did that along with the veg oil... and voila!!! a masterpiece... I'm a pretty good cheesecake maker ... but this one was a toughy to figure out.. definitely not for the novice...
