White Peach Sangria

This was awesome. Made it the day before with a bottle of Gewurtraminer, 1/2 cup mango vodka, 1/2 cup peachtree, frozen peaches, mangos, and strawberries. Was literally gone in 5 minutes. Next time need to make a triple batch!

Honey and Feta Spread

Sauerkraut-Stuffed Slow-Cooked Pork Roast

This is a perfect lazy, freezing-cold Saturday night dinner. I used 16 ozs of bagged sauerkraut and added 1/3 cup raisins and 1/3 cup sliced apples to it and stuffed it all into the middle of the roast. The meat was moist, flavorful, and my toddler daughter scraped her plate. Will definitely add to my favs.

My family loves this. Definitely dinner party worthy. To cut down on the fat I use fat free half-n-half instead of heavy cream and fresh baby spinach is much more tasty.

Guacamole

This guacamole is better than the fresh stuff I had in mexico. I mashed two with a potatoe masher and chunked the last to give it more texture. Next time I will add a little more cilantro. Wonderful recipe.

Roasted Pork Loin

I cooked it in the oven the first time, then I followed A Steitz's recommendations and made this in the crock pot and it was even more yummy! Definitely let the meat cook in the wine, it is sooooo much better.

Maple Salmon

Wicked yummy! The sauce is sweet without being too sweet. I served it over mashed potatoes and even my 3 year-old was scraping her plate. Will definitely tell my friends about this one.

Buffalo Chicken Dip

A friend referred this recipe to me and holy smokes am I glad she did. I used 3 chicken breasts and shredded them in my food processor. I used blue cheese dressing as well and didn't use the cheddar. Cooked it in a casserole dish at 350 for 25 mintes and it was AWESOME!!! Next time I will have to triple the recipe because it went that fast.

Beth's Spicy Oatmeal Raisin Cookies

These cookies are the best I have ever had, even better than Peperridge Farm! I added 1/2 cup chopped fuji apples and baked them at 300 for 15 minutes. They were gone in 2 hours. My family devoured them.

Turkey Pot Pie I

My husband is extremely picky about his pot pies and he LOVED this so much he asked me to make it again with beef tonight. I made a few changes. I used the onion and the celery but for the rest of the veggies I used half a bag of frozen corn, peas, carrots, and string beans. I only used one boullion cube and 1 cup of water. I cubed the potatoes pretty small and after the veggies and potatoes were cooked I added a jar of Homestyle turkey gravy. I also used about 2 cups of cubed turkey. I baked the bottom crust for 10 minutes while the filling was cooling and then covered with the top crust. I sprayed the top crust with butter cooking spray to give it a little more color. It came out perfect. My husband ate almost half the pie.

French Toast Stars

This was fabulous. I was soo bored with the same old french toast. Don't be scared by the amount of honey, I started out with only 1 tbsp and after the first slice quickly added the other tbsp. They were not too sweet at all. I used light bread and half&half instead of heavy cream. They came out great. You have to cook them at a low heat because of all the honey or they will burn quickly. Definitely a keeper.
