About this Cook
I'm a 40 year old mother of two looking to adapt a healthier, more active lifestyle. I've taken a greater interest in cooking clean and healthy meals that satisfy the body as well as the soul. I want to impart a sense of health and responsibility in my kids so that they grow up knowing how to fuel their bodies, minds, and souls as well.
My favorite things to cook
Fried rice; Fish Tacos with Black Bean Salsa; Beef Panang; Rosemary New Potatoes; anything with feta cheese; Jackie Warner's protein shake
My favorite family cooking traditions
My mom is from New Zealand and makes the most amazing Pavlova that my brother, sister and I all drool over. One weekend we were all at my mom's house and she brings out a large, square Pav and asks me to cut us each a piece. Knowing what the inevitable was, I decided to split the entire Pav into quarters. As I was videotaping the mayhem of each person scrambling for their "share", my sister's fork attempted to sneak some of the toppings off of my piece, which was met with my fork being used as a weapon to defend my share and some shaky camera footage! We are serious about our favorite dessert and had lots of laughs about how far we'd go to protect our portion!!
My cooking triumphs
Learning new recipes that are outstanding, super easy and super tasty! I'm proud of my spice selection, using heat to kick up certain dishes, and experimenting with fresh herbs grown in my kitchen and on my back porch.
My cooking tragedies
According to my kids, most anything healhty I put in front of them! Ha!! They may not like my homemade meat sauce now, but one of these days, they'll remember it and wish they had some!

Dad's Leftover Turkey Pot Pie
BEST POT PIE RECIPE EVER!! I've been searching for that one special pot pie/comfort food recipe and I finally found "the one". My only regret when making this tonight was that I only had one pie crust, otherwise, I would have made it by the vat! I followed the recipe almost exactly except that I didn't have celery seed so I used some parsely flakes instead. Not sure if this helped or hindered but I loved it anyway! I really appreciated that it wasn't a can of soup mixed with some veggies, but rather ingredients I always have on hand (except for the pie crusts). I'm not one to mess with perfection, but in a bind I might try making my own crust if I don't happen to have the frozen kind. Thanks for an awesome recipe Rob N.! You gave me the perfect recipe for one of my all-time favorite comfort foods!

Garlic Alfredo Tilapia
Wow, that was worth every bit of the 15 minutes it took to prepare such an amazing meal!! I loved it! Made a few tweaks to the jarred Alfredo sauce - sauteed 3 cloves of garlic in the butter then added some heavy cream to the sauce because the extra butter made the sauce a bit too salty. Then, added in some grated asiago and a handful of shrimp. The sauce was good enough to eat alone but I spooned it over the seasoned filets, on top of bowtie pasta and served with a side of broccoli. Life was really good in the few minutes it took to scarf that down!! Thanks for the inspiration! It will go on my favorite list!!
