Favorite Old Fashioned Gingerbread

I made the following changes: Molasses substitution: 1/3 molasses, 1/3 brown sugar, 1/3 honey Added nutmeg, extra cinnamon by eye This was light, flavorful, yummy! I tripled the recipe. It made eighteen cupcakes, one 9 inch round cake, and one 4 inch cereal bowl cake. The cupcakes were frosted with white butter cream and topped with marshmallow snowmen from the Family Fun site. My son's Kindergarten class loved it, and the other cakes make good gifts for the secretaries and teachers.

Ham and Cheese Quiche

Excellent. I used frozen chopped spinach, cooked in the microwave and squeezed dry, deli ham sliced and chopped small, and all the cheese. Didn't have half-and -half, so I used soy milk. Also, didn't use mushrooms b/c the kids don't like them. Everyone seemed to enjoy this. I used a frozen crust with no changes to the cooking temp or time - set perfectly, and the kids ate it all. Sweet Potato Pie I

My guests raved about this recipe. I did modify it following suggestions here: microwaved the sweet potatoes then used 2 cups of pulp, added a tablespoon of RealLemon lemon juice when I pureed the sweet potatoes, used 1/2 cup each white and dark brown sugar; added 2 tbs of flour; used evaporated milk instead of regular milk; substituted 2 tbs pumpkin pie spices for the spices listed. I also blended it a little too long when I was making it - it had a mousse like texture when I poured it in to bake. This was fortunate - there were no strings in the finished product, and the texture was velvety and smooth. It took a very long time to bake - don't remember now, and I had to put foil around the edges to keep the crust from burning. Was awesome, and will definitely make again.
