Hurricane Cake

This cake is amazing! It's easy to make and easy to commit to memory! I have made this many times! I reduced the butter using only 1/4 a cup for each step and it turned out just as good, just with less cracking. Everyone loves this and I mist add that many people have told me that they really like this cake even though they usually hate coconut.

Russian Salmon and Potato Salad

This was delicious. I am always looking for ways to eat more salmon because it is so good for you! I used vaccume packed salmon and seasoned liberally with salt and pepper at each layer. It was simple easy and tasty. Read entire instructions before making. I give it 4 and a 1/2 stars.

Mark's English Sausage Rolls

My boyfriend from England says these are just right.. I used Jimmy Dean sage sausage, and a non name brand dejon mustard. I have never worked with puff pastry before and it still turned out to be easy and perfect.

Very tasty very easy! I used three tablespoons of constarch because of family prefers stews/soups thicker than most. i will make this again.

Chicken and Red Bean Enchiladas

I used the leftovers from a whole chicken for this one, and light red kidney beans. I think next time I'll go with pintos instead. I will make this again. The family loved it.

Easy Chicken Enchiladas

Not bad!~ I think the sauce looked funky.. no one noticed since it's wrapped up. but if the kids had seen it they may not have liked it so well.. i thought the taste was excellent. I used hot homemade salsa so mine was almost spicy enough but i may add green chilies next time around and cover with red sauce before baking.

Simple, easy, wonderful taste!~ Due to the other reviews I scaled the recipe down to 1, especially since I had olny 3 fillets.... and I still had lots of coating left. This is sure to become a new family favorite.

Easy Coq Au Vin

we were looking for a meal that a man from france made for us. this was close, but not nearly as flavorful. I think the author might make it easier for the reader if it said what type of red wine is best. i used a table wine.. i might try it again with melot or something with more flavor.
