i recently started lifting with a personal trainer and started a nutrition diet plan so my eating has changed dramatically and i am always looking for new low calorie ideas.

Sandwich day. On Saturdays my mother would bring home every lunch meat and topping you can imagine and we would all build our own "dagwood" sandwiches. I also make many different hot sanwhiches and subs.

Spanish-Style Quinoa
Excellent, i had a different twist on this recipe, i used pablano and sweet red pepper, diced tomatoes and low sodium beef broth, added some cayenne for heat and extra garlic. When the quinoa was done, mixed in the black beans and rolled into wheat tortillas with low fat cheese and made wholesome healthy burritos. Thanks for the idea, it was my first time useing quinoa. Boom!

Chocolate Covered Strawberries
This was trial and error for us even after reading many of the reviews. Chocolate is very tricky to melt properly and we were never able to get it to a "drizzle" consistency at all, our berries were quite large because thats all i could find so they were delicious but not as attractive as i wanted. There has to be a way to make the chocolate a little thinner so i will continue to search for easier methods and the best melting chocolate to use.

Stuffed Pork Chops I
My family loved this, i cut pockets and stuffed my chops then put the extra stuffing on top as the recipe calls for (I used boxed stuffing) I also par boiled small to med. potatoes, i arranged my chops all around the sides of a large roaster (as i made 8 instead of 4) and arranged the potatoes in the middle and poured 2 cans of soup over all and baked as directed. Big hit. Thanks!!
