Apple Pie

Reviewed: Jan. 10, 2011
Followed recipe exactly and turned out fantastic! Used 5-6 medium-sized apples sliced VERY thin. Others have complained that this recipe is too watery upon serving; we did not have that problem, but it sat in the fridge overnight before we cut it, so maybe that helped. Will definitely make this again.

Husband loved it! I'm totally new to cooking seafood, and this was super-easy.

Garlic-Lemon Double Stuffed Chicken

Reviewed: Jan. 10, 2011
One of our favorites and becoming a weekly staple at our house. Looks like it should be high-maintenance, but is totally easy. Can easily be reduced to feed one or two.

Fast and Friendly Meatballs

Reviewed: Jan. 10, 2011
My star rating is with the addition of spices to taste. As written the recipe is rather bland. We add minced onions and garlic, plus some extra italian and hamburger seasonings. We love that the recipe is quick and they cook up quick. They go straight from oven to sauce to tummies at our house, but we think they would store well if there were ever any leftovers.

Very good fresh and still tasty after a week in the fridge or freezer, which makes it great for small families.

Scottish Shortbread IV

Reviewed: Apr. 21, 2012
Super simple, no frills taste. Can also be made in a round cake pan or pie plate. Just bake til browning on edges and done in middle for extra simplicity.

Easy Beef Pot Pie

Reviewed: Sep. 4, 2012
Excellent basic potpie recipe! Mine took closer to 45 minutes to cook and the veggies were still a little crisp, but we liked that extra texture. Would definitely make again!

Lactation Cookies

Reviewed: Jun. 10, 2014
Great for boosting supply! Try to get brewers' yeast that says "mild flavor" or something similar; that will cut down on the possible tangy/bitter taste - which I didn't notice at all. I skipped the chocolate chips and used shredded coconut instead. I also subbed 1/4 C coconut oil for 1/4 C of the butter. They came out tasting like macaroons. YUM. The coconut substitution was mostly to keep my husband out of them. Worked great. You could also use pretty much anything you'd like - nuts, raisins, dried fruit - it would all work fabulously. If your dough comes out a little sticky, toss some more flour or oats in there. These cookies also freeze really well, so might as well make a double or triple batch and be set for a while. :)

Lemon Pound Cake Cookies

Reviewed: Aug. 16, 2014
These were not super sweet - kind of subtle, which I like. We did not have lemon extract so I mixed the zest of one lemon with 1.5 tsp vanilla extract and 1 tsp lemon juice and let that sit while I prepped the rest of the dough. I used unsalted butter so I added about half a tsp of salt, too. I was out of powdered sugar so we did not do a glaze, but my church ladies loved the cookies' texture and the not overly sugary taste. Will definitely make again. We baked at 375 for about 11 min on parchment-lined sheets and they turned out perfect.

Best of the Best Blueberry Muffins

Reviewed: Jan. 10, 2011
A little sweet for my tastes and the part about mashing a few berries into the dough will predictably turn them slightly blue, not classic like the picture. But still tasty.

Grandma's Secret Pie Crust

Reviewed: Sep. 4, 2012
This crust is delicious! It is super flaky, though. If you're going for flaky, this is your crust! It doesn't hold together so well when serving because of the flakiness, so if you're going for that picture-perfect slice, this might not be the recipe for you. Excellent texture when eating, though.
