Tangy Buffalo Chicken Pasta Salad

Very simple summer salad, and flavorful! I added green peas and red onion, used raw red pepper instead of the roasted red peppers, and substituted yogurt for half the mayo ... but those are small changes ... The recipe would work well as written. We also ate it before chilling (couldn't wait!).

Italian Sausage with Farfalle and Broccoli Rabe

We loved this! Slight modifications: less sausage, less butter, added a touch of cream, and added more cayenne pepper (instead of red pepper flakes) to kick it up a notch!

Chicken Enchiladas with Creamy Green Chile Sauce

Great recipe. For a vegetarian option, substitute sautéed spinach and garlic and/or hominy, instead of chicken. My family loved this, and I followed the recipe exactly (other than adding the above ingredients with a little roasted chicken ... We're not big meat eaters!). Served with lettuce, tomatoes, olives, green and red onions, and homemade salsa ... I didn't feel that this needed additional spices, even though generally I use a lot of spices. This sauce would also be great on seafood enchiladas!

To-Die-For Chicken Pot Pie

Very good for a traditional pot pie recipe ... simple to prepare (though you need to start a couple of hours prior to your meal). I made no modifications other than using half gravy mix, and half roux with chicken stock, and this turned out fine.

Four Cheese Macaroni Casserole

A nice twist on traditional macaroni and cheese casserole ... we enjoyed the tomatoes (though it was too spicy for my daughter when using habanero diced tomatoes)! I did add sour cream, so that the dish wouldn't be too dry ... and sprinkled bread crumbs on top.

Peppered Shrimp Alfredo

My family found this dish too rich for our taste. Next time I'll substitute butter, cream, garlic and parmesan for the jar of Alfredo sauce ... the recipe is already relatively time-consuming to prepare, and it wouldn't take any longer for the sauce to be 'homemade'. Other than that, the dish was flavorful, and I added spinach for more color and nutrition (peas would work as well)!

African Peanut Soup

We absolutely loved this soup ... I substituted carrots for the red bell peppers, salsa for half of the tomatoes, chicken broth rather than vegetable, used 1 cup rice, and added cumin (as others have suggested). The brown rice definitely needs to be pre-cooked for at least 30 minutes prior to adding. Highly recommend this as a winter 'comfort' food! Cilantro and sour cream, or peanuts, would be great toppings as well. Very simple to prepare, and very flavorful.
