California Potato Salad

I was looking for a way to use up some extra croutons and found this recipe. It was definitely different. If I made it again I would use less Dijon mustard or a weaker Dijon mustard. But the reason I only gave it 4 stars was because I followed the suggestion to make it the night before and let the flavors mix. This made the croutons mushy. I would recommend making the night before to let the flavors mix, but I wouldn’t add the croutons until you were about to serve it. If the croutons aren’t crunchy, then I don’t see the point in adding them.

Easy Paella

This was an excellent dish. My husband loved it. I used kielbasa instead of chorizo for my own personal preferences, but I really think that you could use almost any meat.

Slow Cooker Pernil Pork

Very good! My husband and I love this. Because it makes a lot we have 3 meals of this. The first we eat shredded over rice. The second we eat as tacos. The third is Cuban sandwiches! It is my favorite slow cooker dish.

Pancakes I

I used whole wheat flour instead of regular, and Splenda instead of sugar and these pancakes still turned out great. It is a new favorite.

No-Cook Never-Fail Fudge

I've made this on 4 occasions now and everyone loves it. Noone believes there is cheese in it. In fact, I've even received the comment, "I know fudge and this does not have cheese in it." I would recommend this to anyone.
