Quick Edamame Salad

Made this salad as I was looking for a way to use a bag of frozen edamame & had most of the ingredients on hand...WOW,YUMMMMMM!!! Used green onions instead of red & omitted parsley as I had none. Let it marinate overnight. I can't stay out of it, it's soooooo good, yet so simple & easy. Can't wait to take it for lunches this week. Thank you, Allison!! :)

Honey Mustard Corned Beef Brisket and Cabbage

I've never been a big fan of corned beef & I only make it once a year for St. Patty's Day...but after trying this recipe, I will make it more often. YUM!! The only things I did differenty were to add the spice packet (that came w/the beef) to the crockpot, cut the sauce recipe in 1/2 (it made plenty) & did my potatoes & cabbage seperately. Again, YUM!!!

Creamy Eggnog Fudge

Made this for the 1st time to add to my Chritmas cookie gift plates. Excellent addition. Very rich (yet adddictive),so a small piece goes a long way. Let pan set up in a cool area. NEVER refrigerate fudge (as Sheri Coleman suggests) it changes the molecular structure of the sugar & you will have gritty fudge instead of creamy!

Baked Mexicali Pork Chops

Very surprised @ how yummy this simple recipe is. Followed recipe except I seared the chops on a grill pan after seasoning (yep, I know pork is "the other white meat", but I prefer some color on my pork!) Also threw it all into a covered casserole dish instead of using the foil (sorry Reynolds Wrap!)

Blueberry Crumb Bars

I'VE MADE 4 PANS OF THESE IN JUST ONE WEEK. FIRST PAN FOR HOME TRIAL USING JUST WHITE SUGAR.....VERY GOOD. NEXT THREE PANS (ONE FOR A COOKOUT, ONE FOR A GRADUATION PARTY & ONE TO GO TO W/MY SON TO N.HAMPSHIRE FOR A NASCAR RACE) I USED 1/2 C. WHITE SUGAR & 1/2 C. LIGHT BROWN SUGAR FOR CRUST....EVEN BETTER. ALSO ADDED 1 TSP. VANILLA EXTRACT TO BEATEN EGG. I'LL BE MAKING THEM AGAIN THIS WEEK FOR MY BEST FRIEND'S BIRTHDAY. THEY DO TRAVEL EXTREMELY WELL. SINCE I LIVE IN NEW ENGLAND, I'VE TAKEN ADVANTAGE OF THE FRESH BLUEBERRIES THAT ARE AT THEIR PEAK.

Fresh Apple Omelet

THIS WAS ABSOLUTELY WONDERFUL. I DOUBLED THE RECIPE & INCREASED THE BAKING TIME TO 20 MINUTES...IT WAS PERFECT. WE'VE HAD IT 2 WEEKENDS IN A ROW FOR BREAKFAST, BUT WHO SAYS WE CAN'T HAVE IT FOR DINNER WITH SOME SLICED HAM AND NICE FRESH SWEET BREAD...YUMMMMMMMMMMM!!!!!!!!!!!!!

Mom's Chocolate Chip Cookies

Mmmmmmmmmm.......this is one SUPERB cookie! I didn't have vanilla pudding, so I subbed with toasted coconut flavor instead. Threw in 1/4 c. sweetened, flaked coconut & followed the rest of the recipe exactly. Even my finicky boss was impressed. Only regret was how fast they disappeared (I have 2 teenage boys in the house). Changing the pudding or chip flavors enables limitless varities.........THANKS!!!

TRIED THIS RECIPE AS A NEW ADDITION TO MY X-MAS COOKIE TRAYS. VERY WELL RECEIVED BY ALL. I FAVORED THEM AS THEY'RE NOT OVERLY SWEET & I ADORE THE NUTTY CRUNCH OF THE SESAME SEEDS. CERTAINLY WON'T BE WAITNG FOR X-MAS BEFORE MAKING AGAIN!
