Cheesy Ham and Hash Brown Casserole

This casserole is a hit! I made it exactly as written and it was delicious. I made it a second time with a diced red bell pepper for some extra color.

Easy Tuscan Chicken

The flavors of this recipe were delicious, but I had to modify the cooking technique for the chicken. I tried broiling, as instructed, but my chicken was smoking by the end of the 10 minutes, and the thick chicken breasts were still raw in the center. Next time, I'll probably bake the chicken, instead of broiling it, and I'll slice the breasts in half lengthwise, before baking. I also sauteed two cloves of minced garlic along with the onions. Based on other reviews, I reduced the salt to about 1/2 tsp, and this was plenty.

Slow Cooker Taco Soup

This was really tasty, and pretty simple to make. I did make a few changes, based on others' reviews. I used ground turkey instead of beef, and browned the turkey along with the chopped onions, as well as 2 cloves of garlic. I substituted black beans instead of kidney beans, and rinsed and drained them. To make the soup a little thicker, I used only 1 c. of water but added an extra 8 oz. of tomato sauce. To add some extra spice, I used canned diced tomatoes with jalapenos. Overall, I thought the soup was flavorful but certainly not too spicy. I also added a package of ranch mix based on other reviews. I will certainly be making this again.

Broccoli with Garlic Butter and Cashews

This is a delicious broccoli recipe, with a great combination of flavors! I'll definitely be making this again. I made a few small changes to the recipe: 1)I steamed the broccoli for the same amount of time, instead of boiling it, 2) I reduced the amount of butter to 1/4 cup, to cut out some of the saturated fat, while keeping the rest of the sauce quantities the same, 3) I added the garlic to the melted butter and allowed it to saute for a few minutes before adding the rest of the ingredients, and 4) by accident, I used a lot more cashews than the recipe called for (~1 cup), but the cashews add such a great crunch, that I thought the quantity was great. Next time, I might try reducing the butter even more and using some olive oil.

Sweet and Spicy Green Beans

This recipe is easy and flavorful! I followed the recipe exactly, except I used olive oil instead of canola oil. The sauce had a great spice to it, but wasn't overwhelming.

Chicken with Quinoa and Veggies

Really tasty! This is a great quinoa recipe. My husband doesn't like feta cheese and he even liked it. I made a few modifications to the recipe: - I used 2 minced garlic cloves instead of garlic scapes - I added a chopped red bell pepper along with the tomatoes and zucchini - I didn't add any salt. The recipe was fine without it.

Savory Chicken Breasts

This recipe was easy to prepare and very tasty. Based on other reviews, I made a few modifications. I seasoned the chicken breasts with a little bit of garlic powder, in addition to the pepper. I doubled the amount of soup (1 can of cream of chicken and 1 can of cream of chicken and mushroom) and added about 1/4 cup of cooking Sherry. I mixed in bread crumbs with the melted butter, before sprinkling the mixture over the chicken. I ended up cooking the chicken for about 15 extra minutes because the chicken breasts were very thick. My husband and I both enjoyed this recipe and I'll definitely make it again. Next time, I'll try using a box of Stovetop stuffing, as others have suggested, since that sounds like a great addition.

Easy Garlic Broiled Chicken

I made this recipe with chicken breasts and adjusted the cooking time, so perhaps I would have liked this better with thighs. The recipe was very easy, but I wish it had more flavor.

Salsa Chicken

I made this recipe exactly as written. It was quick, super easy, and very tasty. This is a great week night meal. I used spicy salsa, and it definitely had a nice kick to it. This goes wonderfully with the Quinoa and Black Beans recipe on this site.

Spicy Salmon with Caramelized Onions

Delicious recipe! I made a couple of small changes based on other reviews. Like other reviewers, I baked the salmon instead of cooking it on the stove (about 22 minutes at 400 degrees). I also used a whole onion, sliced instead of minced, with a dash of balsamic vinegar. The dish was flavorful and spicy, although not too spicy for my taste. I will absolutely make this again.

Quinoa and Black Beans

Delicious! I made a couple of modifications to the recipe, based on the suggestion of other reviewers: I added only 1 can of black beans, which I thought was plenty. I also added a finely chopped red bell pepper when sauteing the onion and garlic, and used heaping measurements of the cumin and cayenne pepper for some extra kick. I thought the dish was excellent! Very flavorful, with a nice spice. I will definitely be making this recipe again.

Addictive Sweet Potato Burritos

Fantastic! My husband and I love these burritos -- and my husband doesn't even normally like sweet potatoes. He loves this recipe so much, he's sent it to some of our vegetarian friends. Like other reviews, I used black beans instead of pinto beans. These burritos freeze very well.
