Easy Arroz Con Pollo

I cooked this dish for a crowd and it was a big hit. Followed the recipe to the letter, except I sauteed the onion and pepper with a little butter before adding to the dish. I served it with Tasty Lentil Tacos and Spicy Bean Salsa, also found on this site. I live in Texas. In defense of this person who so graciously shared her recipe with this site, when you go to most "mexican" restaurants and ask for "arroz con pollo", you get a dish similar to this. I consider this Tex-Mex, not traditional Mexican. And I find the sarcastic, self-aggrandizing comments from some reviewers to be rude and unnecessary (and it isn't fair to "review" a recipe you haven't even made). Arroz con pollo translates simply to "chicken with rice". This is a simple, Americanized version that is quite prevalent in some areas of the country.

Whit's Chicken Enchiladas

I was very pleased with this recipe. I will say that I used white corn tortillas because my husband has issues with refined flour but other than that I made it exactly as listed. Very delicious! I got rave reviews and came home from the potluck with an empty dish. Next time, I am going to try using canned white chicken to save on time.

Apple Harvest Pound Cake with Caramel Glaze

I did have to change this a little-couldn't find my Bundt pan and I am allergic to walnuts so I cut them out. Normally I don't review when I make changes because I feel like I am not really reviewing the recipe (wish more people felt this way). However... I feel like this is more or less the same cake and I wanted to rave! This cake was a huge hit at the dinner I went to. NO leftovers.

Baked Lemon Chicken

This is delicious, fast, and easy. I was very doubtful that just dipping (and not marinating) the chicken in lemon juice would give it a good flavor. I was pleasantly wrong. Delicious, moist, and tender. I cooked the chicken on a cooking stone so the bottom was as crispy and delicious as the top.

Lentil Soup

I have made this soup both exactly as listed and with substitutions. The second time, I had a lentil starter box (with dry lentils, peas, carrots, etc...) beef bouillon, cumin, red wine instead of vinegar,and sausage. (So I guess the second time really wasn't this recipe!) Both ways are absolutely delicious. I didn't think I liked lentil soup! An economical, easy way to get your veggies in.

Oranged Cranberry Sauce

I thoroughly enjoyed this recipe. Although it is a personal peeve of mine when people alter the recipe and then review it, I did only have one cinnamon stick and it seemed to be perfect for my tastes. I took the leftover sauce and brushed it on grilled chicken breasts the last 5 minutes of cook time. It made a crunchy, delicious glaze for chicken! We loved it at our house!

Butternut Squash Soup

This soup is delicious. I have made it exactly as described, but I prefer it with half the cream cheese and try substituting the cayenne pepper for curry powder! Delicious!

Brown Sugar Meatloaf

This was wonderful, you would never think that sweetness in a meat dish would be so good, but it is. I have made this twice, once I didn't have any crackers so I used rolled oats and it worked great also.

Awesome Slow Cooker Pot Roast

I really enjoyed this recipe, it is a simple way to make a hearty meal! I did add potatoes, carrots, and onions, plus a little red wine this last time I made it, but I have enjoyed it as is before also. It smells heavenly coming in to the aroma of a slowcooked roast after soccer practice! One note about this recipe: If you like "lighter" beef dishes, then you will not like this. This is a "middle America, salt of the earth, meat and potatoes" type dish best served on a chilly evening in fall or winter.

Baked Pork Chops I

This was absolutely delicious! I am glad I read the other comments about overcooking, I cooked my chops for 20 minutes before putting the sauce on and I think that was perfect! My family all really enjoyed this, even my ultra picky 4 year old. I will definitely make this again!

Chicken or Turkey Tetrazzini Deluxe

Absolutely delicious! My whole family loved this, even my 7 year old who hates mushrooms couldn't stop raving about this dish! It was also a wonderful way to use leftover Christmas turkey. I didn't change a thing, but I could see how I could experiment with different cheeses, veggies and meats to add variety to this dish. Thank you for sharing this recipe, it was wonderful! Oh, by the way, the other reviewers are right, this does make ALOT! I cut it in half and we still had lots of leftovers!

Bread Machine Rolls

Absolutely delicious! I was a little leery after reading the reviews about the bread being sweet, so I cut the sugar down by 1/2 tablespoon. I also didn't have any powdered milk, so instead of the water, I heated some skim milk and added it. I found these rolls to be superb, and not sweet at all. I think the criticism that the rolls were heavy can be fixed by letting the rolls rise an additional 15 minutes. Also, you needn't bother with the egg white wash! If you want glossy rolls, just rub a little butter on the tops after they come out of the oven. They will wow your family at dinner, with such little effort!

Taco Pie

Absolutely delicious! I couldn't believe how something so simple can taste so good! I didn't put the sour cream in with the mixture, because I have picky kids who won't eat it. I served it as a garnish along with salsa, fresh tomatoes and shredded lettuce. I also used low fat crescent rolls, you won't notice a taste difference, but it cuts out a lot of fat! This will be a staple at our house! My husband couldn't stop raving about how good it was, and kept asking what was in it!

Easy Dump Cake

This is a fabulously moist cake, it doesn't need frosting, just a light dusting of powdered sugar if you are looking for optimum presentation. One thing I would really recommend is using mini chocolate chips, as the regular ones tend to sink to the bottom of the cake. My ladies group wouldn't believe that I baked this cake, they said it had to be bakery. Thanks for the great recipe!

Heavenly Potatoes and Ham

Absolutely delicious! I didn't have any bread crumbs, so I didn't use them, and I didn't bother with the butter and used less potatoes, as suggested in previous reviews. I loved the baked potato with all the trimmings taste! My husband went nuts over this! Served with a veggie or a salad this is a complete meal. It is hard to go wrong with the basics. I will make this all winter long!
