Black Bean and Couscous Salad
This is excellent. I wish I could give 6 stars. I have never had couscous in my life and was looking to try something new. If you love loads of flavor, you have to try this. So easy to throw together! I didn't have any red bell pepper, just orange, and the only corn I had was creamed corn...I know, I know...but it turned out GREAT! You would never know by looking at it that it is such a moist, flavorful salad. Great as a side, but I served it with a salad as the main dish and got rave reviews. My husband is a carnivore and didn't even notice that there was no meat on the table. He isn't into "girly" dishes like this, but he ate two helpings and said that this is the best thing I have made in recent memory. I'll be keeping this posted on the fridge and make it a summer staple. Thanks!

Whit's Chicken Enchiladas
I was very pleased with this recipe. I will say that I used white corn tortillas because my husband has issues with refined flour but other than that I made it exactly as listed. Very delicious! I got rave reviews and came home from the potluck with an empty dish. Next time, I am going to try using canned white chicken to save on time.

Apple Harvest Pound Cake with Caramel Glaze
I did have to change this a little-couldn't find my Bundt pan and I am allergic to walnuts so I cut them out. Normally I don't review when I make changes because I feel like I am not really reviewing the recipe (wish more people felt this way). However... I feel like this is more or less the same cake and I wanted to rave! This cake was a huge hit at the dinner I went to. NO leftovers.
