Lloyd's Healthy Chicken Zoopa

I make this recipe all the time, and my family loves it...even my picky two-year-old eats it! I've made it exactly as written, and I've substituted veggies with what I have on hand, and every time it's been delicious. It's also a great soup for when you're feeling under the weather. For anyone nervous about throwing raw chicken in the soup, trust me, it's okay...it's always cooked through and very yummy when the soup is done, just keep it simmering :)

Baked Spaghetti

This was really delicious, and a great recipe for using up leftovers! I made this with what I had on hand: I had less than a pound of leftover cooked spaghetti that I just heated up in the microwave; I had some leftover cooked chicken that I ground up; and 4 cups of leftover (notice a trend? :)) homemade tomato sauce. All other quantities were as written, and it turned out awesome! We are a "saucy" family, so we almost always add more sauce to a recipe, but I would gladly make this with the correct ingredients, and I'm sure it would be great!

Stuffed Pepper Soup IV

This is an delicious soup, and a great way to use up ingredients in your kitchen! I made this with what I had on hand: two green peppers instead of one; 2 cups of leftover homemade tomato sauce; 3 cups of chicken broth I had in the freezer; and ground turkey instead of beef. Some of the quantities and ingredients were slightly different, but I would feel confident making this exactly as written, knowing it would be great! The rice does absorb the liquid (as always), but the new stew we had for leftovers was delicious too. I would probably add some more salt or seasoning to my bowl next time, but my young kids and husband ate it up!

Wine Soaked Mushrooms

I thought these were just okay...I made as directed- although I cooked just under the full two hours, and with a bit less wine. I don't like when other reviewers change a recipe and then negatively comment on its outcome, so I must say that the 3-star rating is not based on the amount of wine or the cooking time. It has to do with the onions- maybe I'm just a "mushroom purist," but I didn't care for the addition. I would make these again, but without the onion.
