Chickpea Soup I

Shrimp Scampi Bake

Butter, garlic, shrimp...what's not to love? Be careful about overcooking the shrimp. I would even suggest checking on them after only 10 minutes. I also found that this recipe called for way too much butter. If you're not serving pasta or potatoes or rice to drizzle the butter on, use less of it.

Baked Spaghetti I

Yummy! My 3 year old really loved it, too. We don't eat hydrogenated oil or MSG, so I subbed Imagine Portabello Mushroom soup for the cream soup, and it came out great. I used about 12 oz. of soup total and left out the water. I also used red instead of green peppers, mozarella instead of Cheddar, and a can of tomato sauce instead of diced tomatoes. I added garlic powder and fresh basil to round out the spices.

Savory Feta Pies

These were yummy! I used canned tomatoes with onion and garlic like others suggested...drained a little and use about 3/4 of a can. The filling came out very tasty. My only complaint is that I ran out of pie crust before I ran out of filling, however that may be b/c I cut my 2 crusts into 4 wedges each, which made folding them a little awkward.

Pignoli Nut Pie

This was delicious. It didn't look like a pecan pie, like I expected. It has more of a cookie-looking crust. I toasted my pine nuts first and also added about 1/2 cup chocolate chips. Next time, I will try reducing the sugar b/c the sweetness almost overwhelmes the taste of the pignolis, and I don't want to give up the chocolate! Great recipe!

Veggie Pot Pie

This was so yummy on a cold November evening. The sauce cooks up nice and thick..thanks to the advice of previous reviewers, I added another TBS of cornstarch. I don't think the soy sauce made it taste like stir fry at all. It gave it a deep, rich flavor. I used a 9x13 pan and put Pam's crust on just the top. It came out perfect! We will definitely have this one again!

Oyster Sauce Chicken

Overall, this is a great recipe. I thought that it was a little heavy on the oyster sauce, though. My house smelled like a Chinese restaurant for days! The leftovers were even better. Serve with lots of rice and veggies b/c you'll have a lot of sauce left over.

Focaccia Bread

I wanted a quick focaccia to go with my pesto, and this recipe did not disappoint! It's even better the next day. The only change I made was that I dissolved 1 Active Dry Yeast packet into the cup of very warm water and added the sugar to help get the yeast going. Then, I mixed together the flour and herbs, adding the liquid yeast mixture last. This is how I was taught to make pizza crust, and it's a great technique.

I like that this dish has so few ingredients, but I found it to be kind of blah. It reminded me of chicken n dumplings or chicken soup... I don't know why I expected it to taste differently!

Outrageous Chocolate Chip Cookies

This is a great one to make with kids. We use only natural peanut butter, which yielded a wonderful flavor and texture. My only (slight) complaint is that I think the cooking time is a little long. My cookies burned, and usually my oven undercooks things. However, we will definitely make these again!

Chocolate Zucchini Bars

I agree with the others...this is definitely not a cookie or a bar. It's like a quickbread or even a cake. Very moist and yummy, with a subtle chocolate flavor. Makes me feel not quite so guilty about indulging!

Chocolate Chip Cookie Bars

I picked this recipe b/c I wanted a quick cookie fix, and it was very easy to make with my toddler. However, the texture was way too dry and crumbly. I think the recipe needs an egg or maybe some oil or something.
