Hash Brown Sandwich

Have not made this version, but just had one locally. They used diced bacon and ham, added sour cream and green onions along with the cheese. Decadent and delicious!

Classic Standing Beef Rib Roast

I have a different cooking method I have used for decades, but I have the butcher cut the bones off, then tie them back on. Great flavor for bones and mmmmmmmm! beef barley soup, but you also have a roast so easy to carve and serve. Try it!

Hearty Breakfast Muffins

Great snack or healthy breakfast. Teamed with a sausage frittata for a working breakfast meeting. Hit a good note with Paleo dieters, vegetarian and all of us between. Rave reviews and they kept nicely for two more days. Warmed with a bit of butter. Yummmmm!

Chicken Enchiladas Suizas

I have made this recipe for years and years - served 50 people at my daughter's college graduation dinner with it. There is some prep involved, but the beauty is it can all be done well in advance. Then, company comes, or the party starts and about 40 mintues later you have a phenomenal dinner. I serve it with a black bean and corn salad* with lime dressing. Garnish the enchiladas when out of the oven with fresh guacamole, sour cream and home-made salsa and serve with tortilla chips to dip and chase the goodies with. It is great for a buffet dinner. I use a whole roasted chicken, chill it then shred it instead of the boneless breasts. DO NOT DOUBLE THE CREAM AND BROTH! It is not supposed to be a 'sauce' just moisture for the enchiladas. So much more flavor and so little work. I am making it this week and finishing the meal with a Pot de Creme made with Kahlua. I will be the popular girl then! * Black Bean and Corn Salad II

Perfect Turkey

Truly the best turkey ever....and I have cooked lots and lots of turkeys. I use a fresh, free range, organic bird and used Cook's Illustrated verson of allowing it to dry out. I also used a portable convection oven since the bird was only about 12-13 pounds. UNBELIEVABLE!!! Leftovers for sandwiches were even moist and juicy after several days.

Overnight Blueberry French Toast

I have made this for years. I use 1 1/2 loaves of French bread, cubed. A bit more substance than regular bread slices. Make certain you "squish" the bread cubes down in to the pan and egg mixture. I cover with plastic wrap then cover with foil. Remove before baking, but bake covered with foil the first. Alternatively, grease the foil so it does not stick to bread mixture. If you use frozen berries, drain them well or it will be soggy. Wonderful for a special breakfast. Serve with bacon, sausage and fresh fruit.

Texas Ranch Potato Salad

Just made it and used mayo and sour cream. Added freeze-dried chives, parsley and custom shallot/dill/herb blend. Serving it Sunday, so have reserve dressinf to add before serving. Used bacon grease over warm potatoes before mixing it. My guy loves his Ranch dressing, and he took a HUGE bowl home tonight. I think his family will love it with Easter ham.

2-Ingredient Peanut Butter Fudge

I made this for my grandson's birthday request and included ingredients so he could make it as well. Easy and for what it is, it is pretty good. I still prefer a more traditional fudge recipe.

Grandma Ople's Apple Pie

Okay...what everyone says is true. This is over and above for an apple pie! Adding the syrup after assembly is intriguing. My nephews and grandson love my traditional apple pie, so I will not give up on it. This one is a great addition to the collection. I will continue to use mixed apples to get different flavors and textures. Grandma knew what she was doing, though!

Spinach Brownies

These are terrific! My vegetarian Thanksgiving included this recipe,and I have made it since for different occasions. Nice to have a savory appetizer or side dish for brunch or a hearty drinks party. Easy to eat cut small for finger food or served like a quiche for a brunch or dinner. The kids loved it as well!

Parmesan Brussels Sprouts

My DIL absolutely loves Brussels sprouts, but I don't! I made a vegetarian Thanksgiving, and included these. While I am still not an avid fan, these were very good and I would gladly eat them again.

Brine for Smoked Salmon

Wow! First time smoking fresh salmon, and this was heaven on earth! Our smoker was cooking too quickly, but still came out great. The sugars caramelized, and the citrus added such great flavor. More salmon to come, but a new smoker first. I live near the Oregon coast, so am discovering lots of great local traditions. This is worth the time and fuss.

French Canadian Tourtiere

I love the flavors and ease of this pie. I need to figure out a way to make it hold together better. Otherwise, a definite hit. My sweetie suggested adding potatoe, and as I read some of the reviews, it seems there are some mashed potatoe fans. I have never met a potatoe I did not like, so that will go in next time,and maybe an egg. I did think this would make a great shepherd's (cottage) pie filling, and lard pastry would be divine!
