This recipe was SO GOOD! My husband and I do not like mushrooms at all but I decided to try them in this recipe anyways. We both loved it, we did pick around the mushrooms but they gave it great flavor!! I did make some revisions.
1) cut the chicken into cubes and cook with EVOO and the minced garlic and 1/2 of the italian seasoning, until the outside is white.
2) After the chicken is white on the outside, add the soup (I used cream of chicken & mushroom mix), half-and-half (or milk), lemon juice, 1/2 of the italian seasoning, and 1/2 cup of mozzarella cheese.
3)Start to boil 1 box of noodles of your choice.
4)I used a bag of frozen spinach and put that on the bottom of my baking dish (used 9x13 instead). Then covered with a thin layer of mushrooms. and Added the chicken mix. On top I crumbled real bacon, added the rest of the mozzarella cheese, and sprinkled parmesan on the top.
5) Bake for 20 min. the last 6-8 I put in garlic bread.
6)For presentation I put noodles on the bottom of a round platter with curved edges. Added the chicken florentine bake on top. Then put the garlic bread on the edges.
