Pumpernickel Rye Bread
absolutely loved how the bread turned out. made dough in bread machine and baked round loaf in oven. Awesome recipe. Loved it. Will be my go-to pumpernickel/dark bread recipe. only tweaks: a little onion powder and cider vinegar--decreased cocoa to 1 tbsp and added a little extra caraway seed.

Low-Fat Blueberry Bran Muffins
made it with unsweetened vanilla almond milk instead of skim milk and used splenda brown sugar blend instead of brown sugar. added 2 tsp vital wheat gluten, used all whole wheat flour and used almost a pint of fresh blueberries. it is very healthy low-calorie and moist from the blueberries and applesauce. only reason that I did not give it a 5 star--in presentation it is not as beautiful as a blueberry muffin made with white flour and no bran.

Blueberry Coffee Cake II
baked it on a Friday night and invited a friend over Saturday afternoon to have this recipe with coffee. Only change--substituted apple sauce for oil and added extra applesauce and blueberries to make batter more moist. Friend loved it and we had it with a side dish of strawberries. Stays moist a bit longer also because of the applesauce. Would recommend the recipe for anyone during fresh blueberries season. May try with frozen blueberries if fresh are not in season. if using frozen berries--toss with some flour first. loved the easy to make streusel type topping. hope others will try this recipe too. definitely a new favorite.
