This is a good base for those who are new to making a stew or to the crockpot. For those who like to tinker, it is a great stew to tinker with. As written it is rather bland, but can be made much more flavorful. My tweaks are similar to Corinne's. I also coat the meat in spices and flour then brown the meat before putting in the pot. I also add 1/2 alcohol and 1/2 broth instead of all broth. I have done it with a good hot paprika, but I like it best as a more Provencal stew, using a good red wine and herbs de provence. I've also done an irish stew using a dark stout and irish garden herbs. Both give a nice depth of flavor.
