Maple-Soy Glazed Salmon

This was a really nice way to prepare salmon. I forgot to use the lime zest and chives, but added garlic & ginger per other reviewers' suggestions. I saved a bit of the glaze for my husband to put on his after it cooked. I broiled it in the over rather than grilling. SImply, yet yummy. Thanks!

Mushrooms in White Wine Sauce

I used this for a sauce over penne pasta. Used a vegetable bouillon as I'm vegetarian. Added steamed broccoli & peas to the pasta. Viola, dinner! Really delicious!

Baked Asparagus with Balsamic Butter Sauce

Before this recipe, my husband and I thought we didn't like asparagus. Now we make this every chance we get. I make the soy sauce and balsamic equal amounts, per other reviews. So delicious!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This was wonderful! Thinned the sauce with a bit of white wine. Used gluten-free spaghetti noodles. Will become a regular on our menu!

Brown Rice, Broccoli, Cheese and Walnut Surprise

This was amazing! I used regular brown rice, a vidalia onion, extra garlic, lots of broccoli. I also steamed my broccoli on the stovetop rather than the microwave. We loved this dish & it will be a staple at our home!

Best Bruschetta Ever

This is a summer staple at our house. I sometimes use mixed Italian herbs instead of the basil. I also add 2 T. balsamic vinegar to the mix. So yummy!

Eggplant Croquettes

Let me start by saying that DH & I don't even like eggplant...but we LOVED these. I followed other recs and added 1/2 c. of breadcrumbs and pan fried in the oven in my cast iron skillet (10 min. each side @ 350). Served with spaghetti & marinara sauce. So good! I also think it could be a good veggie burger, served on a bun w/ lettuce & tomato.

Holiday Peppermint Bark

Made this several times over the holidays--it got rave reviews! I melted the chocolate using a double boiler rather than the microwave and added a bit of oil to the white chocolate to help it melt. I also added peppermint extract to the white chocolate. I put the cookie sheet into the freezer between chocolate layers. Helped a lot!

Chocolate Chip Banana Muffins

Love these muffins! I sub 1/2 the flour with white whole wheat flour, 1/2 the oil with unsweetened applesauce, and use lowfat vanilla yogurt. Rave reviews from kids & adults alike.

Applesauce Oatmeal Cookies

i used king arthur white wheat flour for half the flour, increased the cinnamon to 1 t., added 1 t. vanilla, a pinch of salt, & 1/2 cup of raisins. i also had to bake mine a lot longer, perhaps because of the whole wheat flour? we like them! i think walnuts would also be a good addition.

Balsamic-Glazed Salmon Fillets

This is our new favorite salmon recipe! My husband and I love the Baked Dijon Salmon from this site, but were looking for something more heart healthy. We were plesantly surprised that we like this recipe as much! I use more garlic to suit our taste...the glaze is really nice. Leftovers work nicely on top of mixed greens for a great salmon salad.

Blueberry Oatmeal Coffee Cake

I made this for Easter Brunch and it was a big hit. I used a bag of frozen mixed berries (what I had in the freezer)and it worked well. I also made 1 1/2 batches of the topping (husband's favorite part) and it made it more decadent! ;) A nice, healthier breakfast treat!

Banana Banana Bread

We really enjoy this banana bread! I add 1 t. each of cinnamon and vanilla, too. The last time I made it, I subbed half the flour with white whole wheat flour and we couldn't tell at all.

Holiday Tossed Salad

I have made this several times now for group dinners and it has been deemed "excellent" each time. My husband and I decided that it was a bit too sweet with the rasberry dressing so we substitute baslamic vinagrette-yum! This salad does not save well-the leftovers are mushy and wilted. But, there may not be many leftovers, as it is so delicious!

Pasta Fagioli Soup II

This is one of our absolute favorites! I make it for any friend who has just had a baby and am always asked for the recipe. I'm a vegetarian, so I substitute vegetable broth and leave out the bacon. I also have added/subbed with kidney beans and garbanzo beans.
