West African Vegetable Stew

Delicious! I used a whole box (4 cups) of chicken broth because we wanted to eat it in a bowl and not over rice. I expect to make this again and again!

Sooooo delicious! We made this for Valentine's Day, which was also our 6 month anniversary. I think it will be an annual tradition! We did double the sauce.

Banana and Black Bean Saute

This definitely seemed more like a breakfast porridge than a dinner. It tasted good but was very rich and sweet. Odd for dinner! FYI - I made 1/2 cup (dry) basmati rice with this dish and it seemed to be the right proportions.

As other suggested, I added a can of tomatoes (with jalepeno peppers instead of pepper flakes). FYI - I learned from the guy in the meat dept that ham hocks are usually called shanks. I cooked it all in vegetable broth, but that made it a little too salty, so I wouldn't do that again. I also added diced ham. The smoked cheddar cheese on top was key! Great with corn bread muffins.

Broccoli and Provolone Quiche

I used half and half instead of cream. I didn't need the whole pint and I only used 3 eggs plus one egg white. I did add a little flour - I think I'd put even more in, as it was still a little wet. As another reviewer suggested, I put cheese on the bottom and top of the quiche. We enjoyed this dish. YUM!

After-Thanksgiving Turkey Soup

Yum! I had way too much broth, so I set 1/3 aside to freeze. Even then, I had to make 1.5x this recipe! I added frozen peas, and used mostly fat free half and half, and a little full flavor half and half. Delicious!

Yum! We loved this! The sauce is so good that we've made it to have over other pastas as well. We never buy spaghetti sauce anymore - this is so quick and easy and fresh tasting!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

DELICIOUS! This is my new favorite soup. We didn't puree it - the textures were very good this way. It is a filling soup. I can't wait to make it again!

We had a hard time getting the crust thin enough. Also, the sauce could have used a little more flavor. Overall, we enjoyed it, but we would make some changes if we were going to make it again.
