Spicy Steamed Shrimp

Reviewed: Sep. 14, 2008
Excellent and simple. For timing, I always stop cooking shrimp before they curl all the way (for ANY shrimp recipe, whether steamed, sauteed, baked, or broiled.) Otherwise they may be hard to peel and chewy.

Maryland Crab Cakes III

Reviewed: May 16, 2008
I thought I had a good crabcake recipe, with not much but saltines, egg, and some spices mixed with the crab meat then fried. But this recipe is much better, IMHO. I had to substitute Club Crackers for Saltines, which made the dish a little sweeter than I would have liked. I think with saltines it will be great. And next time I might add just a bit more mayo, since I love it so much. And after that, i might mix in some some melted butter with the crab, because it's, well, butter. I used Phillip's Backfin, in the can. I may have set the pan too close to the broiler, since they started to overbrown at about 6 minutes. So keep an eye on them while broiling. This is a definite keeper!

Southwest Summer Pork Chops

Reviewed: Nov. 17, 2007
These are delicious! I didn't have all the spices so I just used what I had. The BBQ sauce and lemon juice is perfect, and doesn't bury the spices. I overcooked these just a tad, maybe 9 minutes per side. Next time I will go with 7 minutes per side. Thanks for the recipe!

Buffalo Chicken Wings I

Reviewed: Nov. 6, 2007
I have used this recipe a hundred times. Great as is, or easy to tweak - with some garlic powder, seasoned salt, Old Bay, lemon pepper or whatever you like. I use frozen wings and fry them for an extra 6-8 minutes. Let 'em get a little crispy before putting them in the hot sauce. Yum! Thanks for the recipe!

Caramel Apple Pork Chops

Reviewed: Jul. 30, 2007
The chops and the apples were good, but the sauce got weird on me. The problem was that the sauce clumped up before the apples were soft. Next time I'll slice the apples thinner. I used 3/4" chops, which got a little dry, so I'll follow the suggestion of leaving the lid on while they are in the frying pan. I'll definitely try again, maybe adding some of the spices others recommended. Thanks for the recipe!

Cheesy Pork Chops with Spicy Apples

Reviewed: Mar. 24, 2007
We liked this recipe; it was easy, fast, and special! We cooked 2 Hormel loin chops which were almost 1 1/2" think, and grilled them about 12-14 minutes. I did substiture Sweeta for the sugar to lower carbs.

Asian Beef Skewers

Reviewed: Dec. 15, 2005
I didn't get the skewers and had to spatula the strips on and off the grill. They were incredible. I only had time to marinate for 90 minutes. Still very tender. This is how I'm cooking flank steak from now on. Thanks for recipe!

Old Bay® Steamed Shrimp

Reviewed: Nov. 9, 2005
I rated this recipe 5 stars becasue it gave me the basic idea of how to steam shrimp, and they came out PERFECT. I used a 2-lb bag of frozen deveined (headless) shrimp, about 20-24 per pound, ran them under cold running water for 10 mins while the water and vinegar heated. I cooked them in a covered pot for about 2 1/2 mins total, and stirred them quickly twice. I used another seafood seasoning mix, but it didn't add much to the flavor. I used almost half a lemon. I used about 2 cups water, 1 cup vinegar. They were good in cocktail sauce, but FANTASTIC dipped in melted butter!

Broiled Tilapia Parmesan

Reviewed: Aug. 2, 2005
This is just delicious. Tilapia is always available, but I hadn't found a way to cook it that I really looked forward to. Now I have. Thanks!

Bill's Sausage Gravy

Reviewed: Jun. 3, 2005
Oh my my. This is great! I didn't have maple sausage, so I used hot sausage. Delicious. And I had only 2% milk, so I added a titch of heavy cream. :-) Next time I'm trying the maple sausage and whole milk to see if it's even better. With the maple, I'll probably add a bunch of black pepper. BTW, I halved the recipe and it worked great. Now I wish I'd made a whole batch!

Hot Jezebel

Reviewed: Dec. 11, 2002
This is really, really good. I've made it for years with half apricot and half pineapple preserves. Recently, I used a small can of drained crushed pineapple instead of the pineapple preserves and it was really good too. Great with Triscuits - you need something substantial. Also, I always "pre-spread" a few crackers and put them on the serving plate to get folks going. You can tell timid eaters to spread a lot of cream cheese on the cracker with just a little sauce so it's not to hot for them. My Mother-in-law gave me this recipe (with half pineapple preserves instead of all apricot) about 30 years ago. I didn't know it was so famous! :)
