Blueberry Zucchini Bread

So moist and delicious! I did change it slightly though. I used 3 cups of zucchini, a very well rounded tablespoon of cinnamon (I love my cinnamon) and I sprinkled a little cinnamon sugar on the top of the loaves. I will be keeping this recipe in my recipe box! Thanks!

Raspberry Lemon Muffins

My first thought when I saw this recipe was how much I like Raspberry Lemonade to drink. So, I made these muffins and now I can say how much I like to eat Raspberry Lemonade! :) I thought these were delicious and very moist! My small changes to the recipe were that I used one egg instead of the two egg whites, I used about an extra half a cup of raspberries, and I put cinnamon in the sugar for the topping! Will be making again!

Easy Lemon Bars for Junior Chefs

I used a combination to make this dessert. I used this recipe, the review idea from Alene, who reviewed this recipe in July 2008 and my own spin on things. I made my own filling using 5 bananas, a small package of instant pumpkin pudding mix and about 1 cup of milk. Then added the cake mix. After baking, let it cool, spread with banana cream cheese frosting and sprinkle with chopped walnuts. It tasted a lot like banana bread. Very easy though. I will be trying it again, using the lemon and maybe other fillings. I had to use up some bananas though today! :)

Cinnamon Nut Loaf

Simple recipe with ingredients I usually have on hand! Might I add, very yummy too! Just like a delicious cinnamon roll. I used a combo of both walnuts and pecans, just because. :) I only had one container of the Grands biscuits, but I split them and it seemed to work fine. I will be making these again.

Buttery Corn Bread

Made this tonight and did not change a thing in the recipe. We loved it! It does have a creamier texture than my regular cornbread recipe, which does not have butter and only 1 egg. We liked this one so much better than my old recipe. This will become my go-to cornbread recipe from now on. Thanks!

Mouth-Watering Stuffed Mushrooms

I made these for my boys and I for our "Meatless Monday" meal. They raved about them! I doubled the recipe, and we had no leftovers. I thought they were yummy, but that maybe there was too much cream cheese. I could not point my finger on it on what my taste buds were trying to tell, but they were still good. Did I mention there was no leftovers? I did leave out the cayenne, since I have a boy who is slightly sketchy on "hot" items. I also had some onion I needed to use up, so I tossed those in with the garlic. Will make again.

Cornmeal Strawberry Cake

I really enjoyed this cake. I used Vanilla Activia, since that is what I had and added a little cinnamon (I adore cinnamon). I also coated my strawberries in a small amount of flour to keep them from dropping to the bottom of the batter. It definitely has a cornmeal/cornbread taste and texture, but I love that. It was sweet, but I did not think it was overly sweet. It might be slightly dry, more like a bread than a cake. I will be making again.
