Gourmet Mushroom Risotto

It was my first time making risotto and it came out amazing! I added garlic to mine. I didn't add chives because I sent my boyfriend to the store and he didn't know what chives were. So you can definitely cut the chives if you want. I brought it to a pot luck but after tasting it we didn't want to share! It was too delicious! But we brought it to the potluck where it was well received, and I'll be making another one just for us later this week... Great recipe. Worth the time over the stove. It really wasn't that long, especially since I find there is not much to cut/chop. Its a 30 minute meal. I'd love to serve it with chicken or salmon for guests one day.

Almond Biscotti

This came out amazing! I added a bit more flour like a few people had suggested (1/4 cup). I am very happy with this recipe. I added a dark chocolate drizzle. I'll be making this again and again.

Wonderful and easy recipe! I loved that I already had all of the ingredients in my pantry! So easy to make and as the off-spring of a British mother, I can tell you these taste truly authentic. A superb recipe that I will be sharing... I will likely double the recipe as 8 goes fast!

Triple Berry Crisp

This recipe is perfect! I only had a bag of frozen raspberries but I really wanted to make a berry crumble. I found this recipe and it came out perfectly! I got rave reviews by all my family who ate it. It did not last long!

MMMMM... Brownies

This recipe was sooooo easy and fast! My husband couldn't believe how quickly I was in and out of the kitchen. These were I would say as easy as a box brownie but I am happy to know what ingredients are in them! My mother-in-law asked me if I had used a box mix, but I only take that as a compliment. :)

No Bake Chocolate Oat Bars

I love these easy to make bars! I actually make them vegan by substituting margarine for butter and they still turn out fantastically. I make them every Christmas now as I have vegans in the family... My only change is that I do make extra of the chocolate/peanut butter filling.... Otherwise I don't find there to be enough inside.

Marbled Cheesecake Bars

I loved these bars and found them extremely easy to make. They came out so rich and delicious. The only change I made was instead of the cookie base I used graham crumbs because that is what I had. It worked perfectly...

All-Bran's Best Bran Muffins

This recipe has become on of my staple recipes that I use. I make these muffins about twice a month. I add some extras such as ground flax seed, whole flax seed, walnuts and chocolate chips. Many things can be added or substituted to this fantastic base recipe. Sometimes I omit the sugar and use honey instead, or do half/half. And if I want them to be vegan, I use almond milk instead of the milk. I will be using this recipe regularly forever!

Mound Bars

I was looking to find a recipe as close as possible to what my grandmother made, and this is them! She had called them three-layer squares, but this is essentially them! They are my father's favorite so I made them at Christmas and he and my aunt were thrilled with them. I think this is a fantastic recipe and I will be baking them every Christmas.

Chocolate Chip Banana Bread II

This recipe worked out great! I am happy that it makes two loaves because the first one is already gone! I think it is adaptable because I have made this recipe exactly as written and I have also made it with brown sugar and only 4 bananas because that's all I had on hand, and it still worked out beautifully.

Marble Swirl Pound Cake

I followed some readers instructions and cut the amount of flour, which I think helped because it was moist and not dry. It is very dense though, but everyone still really liked it. I would make it again but I had made it for a birthday cake which I would prefer something fluffier for a birthday cake. But this is a great cake to make to go with coffee or tea.

Crustless Spinach Quiche

I just tried this recipe this week and it was perfect! My only change is that I baked it in a cupcake tin instead to make individual portions for entertaining and I did add onion and fresh garlic to the spinach. My mom, who doesn't eat gluten, loved that it was crustless and really enjoyed them. I'm being asked for the recipe by others also. Very happy with this recipe. I only wish I had oiled the pan better since it is crustless (had just given a light spritz of Pam because I didn't want them to be greasy.) However I am still having trouble cleaning the pan. I know for next time and will definitely be making these again and again.

Apple Crisp II

I tried this recipe for Thanksgiving and I got amazing reviews! My husband says it is the best apple crisp I have ever made. I love how easy it was to make. I followed all of the instructions except that my oven had it ready in only 30 minutes. I also added sliced almonds to the topping and maybe sometime I will try walnuts. This will now be my go-to apple crisp recipe.
