Tomato-Curry Lentil Stew

I've had a bag of brown lentils and a few cans of fire roasted tomatoes in my cabinet for months now, wondering what I should do with them. I received this recipe via email (through the site subscription) and thought it would be the perfect recipe solution. I'm also on a tight budget at the moment and this is extremely inexpensive to make. It's very quick and easy too! I tried to leave the recipe as is (it sounded just fine to me). I did double it, made some spice adjustments, and used vegetable broth instead of water. This simple stew has excellent flavor, it's filling, and healthy. Everything I look for in a meal!

Italian Dressing Mix

This is a really good recipe that can be adjusted to fit your tastes. My only changes were less salt and I used balsamic vinegar instead of white. I love this on pasta salads.

Corn N Cucumbers Salad

I had doubts about this, but it was indeed very good. I added some black beans. And definitely use real sugar, if you use a sugar substitute it gives it a strange flavor. So yummy!

Orzo and Tomato Salad with Feta Cheese

So great, even with my changes. I left out the olives and added sun dried tomatoes, cucumber, and a regular tomato. Also substituted dried dill instead of fresh. My only issue with this is after it's been sitting in the fridge for a while, it tends to get a bit dry. So I suggest added half the dressing before it sits in the fridge and half of it when you are ready to serve. A great summer dish!

Sesame Pasta Chicken Salad

A very delicious base that can be easily changed. I enjoyed this greatly! I left out the chicken completely and added chopped red pepper, carrots, and edamame. The green onions really add to the flavor. I will definitely be making this again and again.

Easy Pistachio English Toffee Ice Box Cake

I was looking for a quick and easy dessert to whip up and this one was a winner. I brought this to a family gathering and everyone gobbled it up! SO good. The Heath Bars are a must!

Artichoke & Spinach Dip Restaurant Style

I had such high hopes for this recipe and was pretty disappointed when I actually ate it. It tasted like I was eating glorified alfredo sauce. SO salty too! Probably won't ever make this again.

Mustard Chicken

So I couldn't find the french-fried onions ANYWHERE in the grocery store!! I walked down every aisle about 5 times before I gave up. But I was hell bent on making this, so I substituted the onions with crushed up Special K cereal. It came out really great! I used cutlets instead of breasts. (like others I seasoned the chicken before coating it in the mustard) My boyfriend loved it and couldn't get enough!

Mediterranean Quinoa Salad

I LOVED this!! The flavors were marvelous. I sauteed the onions with some mushrooms before adding them, just to cut down on that harshness of raw red onion. I left the pepper raw to give it a nice crunch. I'm not a fan of kalamata olives, so I substituted sun-dried tomatoes. I cut down the lemon juice and oil as well. This was melt in your mouth good! I had it warm for dinner and later on in the night I had to go back to the fridge and sneak a few bites of the cold leftovers..It was just as scrumptious!

Spinach Chickpea Curry

This is the first recipe I have not liked from this site. I'm very surprised because it has alot of my favorite ingredients. Just by the smell of it I could tell I wasn't going to like it. I tried so hard to enjoy it and eat it, but I just couldn't! I'm upset I wasted all that food.

Coconut Curry Tofu

I enjoyed the dish. It was tasty and for those who claimed it was bland, I disagree. This recipe had a lot of flavor. After cutting the tofu into cubes, I baked it in the oven at 425 for about 25 mins. (A healthy alternative to frying) The tofu is more solid and doesn't break apart this way when cooked with the dish. My biggest PROBLEM with this recipe is that it was WAY TOO WATERY! I don't understand how people were making extra sauce because there "wasn't enough". There was plenty! I had to add cornstarch to thicken it up. I served it over rice to soak up all the extra sauce.

Tomato, Basil, and Feta Salad

One of my favorite type of salads. I could eat this everyday! To save on calories I used a fat free balsamic vinaigrette, just a dash of olive oil, and fat free feta. Turned out excellent.

Turkey and Quinoa Meatloaf

Since I am a quinoa lover and I like to eat healthy, I was happy to find this recipe. I gave it 4 starts because the only issue I had was the with the rub for the top. It didn't do anything for me. I think next time I'll stick with the classic ketchup topping. Thanks!
