Mushroom Orzo

nice dish, for sure. made with red wine and portobello mushrooms b/c that's what i had on hand, which gave the dish a deep, rich flavour. i also used 1 C vegetable stock + 1/2 C extra water for cooking the orzo. i made it as a vegetarian meal with french bread; it's probably better suited as a side with meat.

delicious! mine didn't really thicken either, but it was still a good consistency. i used so soya slices and chick peas b/c i couldn't track down seitan, alas.

i liked this! toasted the bread cubes pretty first and added parmesan cheese. i scaled back the recipe slightly b/c it was just for two of us, but we devoured it all!

Blueberry Zucchini Bread

just lovely. used about 2/3's of a giant zucchini, which yielded around 2.5 cups. i made muffins instead, only altering the recipe by adding an extra tsp of baking powder, and got exactly 2 dozen perfect muffins. i sure do love my food processor for dealing with the zucchini! (have made it a couple of times since, with raspberries, or half the recipe as a single loaf ... it's all fabulous!)

Zucchini Hummus

i love the smooth, almost creamy texture the zucchini gives the hummus! i used about 1/3 of a giant zucchini, having used the rest for the zucchini blueberry muffins on this site. i added more garlic per other reviews, and the only other addition was a generous splash of balsamic vinaigrette -- unusual perhaps, but i always add it to whatever type of hummus i make for an extra kick. yum!

Spinach Balls

i've made this a couple of times now; most recently i didn't add any butter or substitute, and i really don't think they need it. try rolling the balls in panko crumbs before putting them in the oven, it's so good!

Thai Curry Tofu

delicious sauce, goes well with the tofu. i will definitely make this again, but will add something to mix up the texture: almonds or cashews maybe, or bean sprouts.

Japanese Tofu Salad

delicious! i used green onion instead of red to my taste, and threw in some rough grated carrot. thought bean sprouts would've been good too, am planning on trying that next time. i did not find it to be even a bit too saucy; it all absorbed into the tofu -- which i recommend freezing, i never have to press it afterwards and it has the best texture, even uncooked!

every time i bring this somewhere, people are sceptical, but end up asking for the recipe! i usually cut down the oil and use whatever flavoured ramen. definitely give this a try, you won't be disappointed!

Baked Spaghetti Squash Lasagna Style

a great way to prepare spaghetti squash. you can change up what you do with the sauce etc to your tastes or what you have on hand. a bit time consuming just cos of the cooking time on the squash, but it's worth it to let it cook properly in the oven for the flavour!

Baked Onion Dip II

delicious tasting, but it was substantially oily as others have indicated. that being said, using large chunks of french bread to mop it up was very tasty! i will try light mayo or maybe a mixture of it and sour cream or something next time, though.

Sun-Dried Tomato Dip

we all loved this! served it with french bread slices, pita chips, and carrot sticks. all were great, and i kept changing my mind which way was best. i might add more tomatoes next time to really bring out that aspect of the flavour, but it really was delicious as written!

Vegetable Biryani

this was pretty good, especially after it had set for a couple of hours. didn't soak the rice and it was bordering on mushy, so i wouldn't. i thought the flavour very mild (having reduced the cloves) but nicely fragrant. i recommend using crunchier or textured veggies. overall pretty good!
