Italian Style Pork Chops

We didn't find anything remarkable about these chops. They were easy to make and didn't taste bad, but they just weren't special. I used the saltine cracers called for in the recipe and really didn't make any significant changes.

Crispy Pesto Potatoes

These are simple and easy to make. They are a nice change from potatoes with olive oil and rosemary. My husband and I enjoyed them and since it is made with ingredients I typically have on hand I will be sure to make again. the potatoes have just a little tange from the pesto, a little fresh ground pepper and they were perfect.

Deb's Spicy Summer Evening Mushrooms

My husband and I really liked these. I can see however where many reviewers would find them over powering. I only let my mushrooms marinade for about 30 minutes and they were perfect. A lot of flavor, not very spicy and still had texture. I added some asparagus to the maranade, but didn't find it did anything for them. We grilled just until the asparagus was tender and enjoyed with grilled pork chops and mashed potatoes.

Beer-Grilled Chops

I marinated my chops for about six hours in this. They had a very mild flavor that didn't over power anything. They were good though.

Best Black Beans

Good and simple side dish recipe. I served with enchiladas and spanish rice. Since I don't like crunchy onions I cooked my beans about 20 minutes. They are definately easy and better than opening a can of refried beans.

Ten Minute Enchilada Sauce

Simply wonderful. As with other reviewers I was concerned about the 1/4 cup of chili powder. I added two tablespoons initially and then added the other two after all ingredients were added for more flavor. I substituted chicken broth for the water and added a little fresh garlic rather than garlic salt. The recipe is really very easy and I will make it again. Other reviewers suggested taking the oil out. I may try cutting it back next time. The sauce wasn't greasy, but I am always looking for ways to cut fat.

Amy's Chocolate Chip Cookies

What a great cookie recipe. Depending on the type of pudding you use, the possibilities are endless for your flavor combinations. I only had chocolate pudding so that is what I used. I also had about a 1/4 cup of peanut butter chips left over, so I threw those in with the 2 cups of chocolate chips. The only thing I was confused about was the 3.4 oz box of pudding. Maybe because I used fat free sugar free pudding the size was different, but I had both small (1.4 oz) and large (2.1 oz) boxes. So, to be safe I threw both in. In response to the reviewer that felt the cookies had a chemical taste maybe it had to do with the type of pudding they used. I was afraid of this since I used the fat free sugar free variety, but I detected no strange after taste. The cookies do not spread much and frankly my daughter and I had fun making them.

Yummy Quiche

Very nice basic quiche recipe. I used fat free half and half and 50% reduced fat cheese, yet it was still very rich and creamy. To make it more appealing to my four year old I left the green chilies out and added fresh snipped chives. The taste was very mild, but we enjoyed it. As with other reviewers I had more than enough batter for 2 pie shells. We ate one for dinner and I froze the other for later.

Teriyaki Marinade III

I used this with chicken breasts I put on to marinde at lunch time. They were perfect. I used the orange juice as called for and found just a hint of the fruit taste in my meat, they were not too salty and came out perfect. I served with potatoes and grilled veggies. Given the ease of this marinade I am sure I will be making it again.

Amanda's Potatoes

These were okay, but I didn't really think they tasted that great for the amount of work involved. To help with the fat content I cut the butter to 2 T and added a tiny bit of olive oil. I also used fat free half and half rather than heavy cream. Maybe if I had added the extra fat in it would have helped. It wasn't that they tasted bad, they were just okay.

Chocolate Chip Banana Bread I

I have to agree with other reviewers, this is more a cake than banana bread. However, my husband took one to work and his students loved it. It was very moist. I however, don't know how other reviewers could say it didn't taste like bananas. I don't like the taste of bananas and tried to eat a piece, that was all I could taste.

Grilled Soy-Sesame Asparagus

I followed the recipe exactly making no changes and these were amazing! My husband complained when they were all gone. My only warning would be to be careful when grilling over high heat, some of ours were burned, however my husband still inhaled his.

St. Louis Toasted Ravioli

These are so great. I like to use meat ravioli from the refriderated section. I have also baked them in an attempt to make them healthier. They turn out okay if you bake on a rack. Bread them per the recipe then spray lightly with cooking spray. I cook in the oven for about 30 minutes at 350 or until they are toasty.

Boiled Chicken

I follow many of the suggestions other reviewers have. I remove the skin to cut back on some of the fat. I also like a lot of garlic in my chicken. I will have to try letting the chicken cool in the pot, I usually remove to cool. Finally, save the liquid as it does make great stock.

Spanish Rice

This recipe was okay. However, for the amount of work I didn't feel it was any better than spanish rice from a box. I halved the recipe and had plenty for four people. In addition to the can of tomatoes, I also added about half a can of tomato paste.

Enchiladas

A good basic enchilada recipe, these are nothing fancy, but they are filling. I cut the recipe in half and had more than enough for four people. I added green pepper, garlic, chili powder and cumin to the filling. They were quick to make and easy to assemble. I did not fry my tortillas in the oil, but had no trouble assembling the dish. I served with refried beans and spanish rice.

Pesto Vinaigrette Dressing

This is an excellent dressing for pasta salad. It tastes like something you would bet off a salad bar. I used a jarred sun dried tomato pesto. It was very tangy so I did add about a teaspoon of sugar and thought this made it perfect. I then tossed with cooled bow tie pasta, cubed cheese, tomatoes, cucumbers and olives. Both my husband and I really liked the dish. I am not sure how I would care for it on a salad though, I am also wondering how it would taste on hot pasta. I will probably try that next.

Unbelievable Grilled Garlic Bread

If you don't like mayo do not make this recipe. I couldn't taste anything but the mayo and didn't like it at all. Also, I haven't figured out the purpose of melting the cheddar. As soon as I put it in the mayo mixture it lumped up again.

Broccoli with Lemon Butter Sauce

My husband and I both really enjoyed this recipe. It was a nice change to broccoli with cheese sauce. I used two crowns of fresh broccoli that I steamed. While it cooked I melted 1/4 cup of light butter (it has a large water content anyway so I figured it evened out. I then juiced one lemon, added a little cayenne, salt, pepper and garlic. I let this simmer until the water was gone from the butter. I poured this over the broccoli and sprinkled with about a tablespoon of parmesean cheese. The broccoli has a very light lemon taste and was perfect. I will remember this and make again in the future.

Excellent. We used this marinade on chicken breasts. They were in the marinade for about 4 hours and came out moist and full of flavor. I followed the recipe exactly and made no changes. It was perfect.
