S'more Brownies

I don't really have anything to add other reviewers haven't already said. I would only put the topping on the last 5-10 minutes as mine was slightly burnt although that didn't stop anyone from eating them. They are very rich.

Grilled Peanut Chicken

A nice recipe. I cubed the chicken then rolled in the sauce before making kabobs with onions. You can taste the hint of curry which gives the chicken an interesting flavor. I really enjoyed it, however my husband says he prefers the Pork Satay recipe also from this site. They are equally simple to make, and have similar flavors I think, this one is a little more complex with the curry.

Spiced Basmati Rice

I gave this recipe a three. I really liked it, but my husband said that cinnamon and rice just shouldn't go together and there was something wrong with it. I enjoyed the spiced flavor and found it a really nice change from regular white rice. I didn't have cashews, raisins or mango on hand so left those out.

Special Crunchy Cookies

On taste alone I would give these cookies a three, but since they are healthier than regular chocolate chip cookies I gave them an extra point. I also don't know how accurate of a review I will be giving as I had to make several substituations and I don't think all of them were equivalent. First, I have no idea what high protein crisp rice and wheat cereal is or a name brand for it, but I am pretty sure my grocery store doesn't carry it. I substituted Kashi Honey Mighty Bites, which turns out is more like Cheerios. I used 1/2 cup of light margarine. Also, since I already had Splenda for Baking I used 1 cup of this instead of the Equal Spoonful. According to what I found on the web you use both products cup for cup in baking when substituted for sugar. The cookies were sweet enough, but they were heavy, using the right type of cereal may have an effect on this. My 4 yo daughter had a lot of fun rolling the cookies in the crumb mixture and they are no harder to make than regular chocolate chip cookies. All in all, they aren't bad and if I can find the right type of cereal to use I may try making them again.

Award Winning Soft Chocolate Chip Cookies

I was really confused until I realized this is the same recipe as Amy's Chocolate Chip cookies, just doubled. As such I am coping my review from that recipe as nothing has changed. What a great cookie recipe. Depending on the type of pudding you use, the possibilities are endless for your flavor combinations. I only had chocolate pudding so that is what I used. I also had about a 1/4 cup of peanut butter chips left over, so I threw those in with the 2 cups of chocolate chips. The only thing I was confused about was the 3.4 oz box of pudding. Maybe because I used fat free sugar free pudding the size was different, but I had both small (1.4 oz) and large (2.1 oz) boxes. So, to be safe I threw both in. In response to the reviewer that felt the cookies had a chemical taste maybe it had to do with the type of pudding they used. I was afraid of this since I used the fat free sugar free variety, but I detected no strange after taste. The cookies do not spread much and frankly my daughter and I had fun making them.

Pizza On The Grill I

Wonderful pizza crust. We love home made pizza. We however live in the south and it is getting to be that time of the year that we don't want to turn the oven on 500 degrees for 2+ hours to heat a pizza stone. We made this last night and found the crust gets just as crisp as when you make in the oven on a stone which is great. I used Doug's crust, but we topped with pesto, spinach, carmalized onions, feta, and sun dried tomatoes. It was a huge hit and my husband and I ate a whole pizza. I placed the second crust in the freezer to attempt to cook next weekend. We will have to see how it goes.

Sizzlin' Steak Burgers

Simple basic burger recipe, but they are nothing to rave about. We added grilled teriyaki mushrooms to ours and the mushrooms really over powered the hamburger.

Awesome Slow Cooker Pot Roast

This was okay. I didn't find the gravy had that much flavor. I did however use Healthy Request cream of mushroom soup. I would recommend adding more spices to give the dish more flavor.

Teriyaki Mushrooms

I let the mushrooms marinade for about 15 minutes then grilled. We served over hamburgers. This is a great low fat easy recipe (if you skip the dressings). The mushrooms taste heavily of the teriyaki sauce. I will make these again. They are super easy.

Double Nickel Dressing

I did not care for this, it is simply too sweet. I scaled the recipe to 10 servings then further reduced the sugar from 1/3 to 1/4 cup. I wasn't too bad the first night, but after sitting in the fridge over night it was like eating candy on my salad.

Simple Marinara Sauce

This was an interesting recipe. I am not sure if the cheese really added that much though. I added a little sugar to cut the acid. I also used half a real onion rather than onion powder. I then cooked meatballs in the sauce and before serving threw in a little fresh basil and parsley. It was good and good reviews from the family.

Manicotti Alla Romana

This was similar to a recipe my mother has made for years. While I do think hers is better, this one is much easier. I was able to make in the afternoon and just pop in the oven for dinner. I noticed the white sauce tasted heavily of chicken boullion, but other than that, it was fine. I may make again.

Roasted Garlic Cauliflower

A great healthy way to add flavor to cauliflower. To lighten the dish further I reduced the olive oil by half. The only problem I had was my garlic burned. I am not sure how to stop that. But the roasting added a nice touch of flavor to the cauliflower when compared to just steaming. I will play with the seasoning, but this is a definate make again at our house.

Hasselback Potatoes

These were an awful lot of work for something that tasted like a baked potato. They simply didn't have much of a taste. Perhaps if you add the spices and garlic others suggested they are better.

Spruced Up Mashed Potatoes

Excellent way to hide the veggies. I didn't think they were strong enough to stand on their own without gravy, so I added some bacon, sauted onions and mushrooms. My 4 year old complained about the carrot pieces, but never noticed the cauliflower. I have decided all of my potatoes from now on will have mashed cauliflower in them.

Pam's Glazed Meatloaf

This is a good basic meatloaf recipe if you don't know what you have never made meatloaf before. I however found it a little bland. My husband who likes his meatloaf plain enjoyed it. The only changes I made were to halve the recipe and add a little garlic. I served with mashed potatoes.

Mashed Potatoes with Fried Mushroom, Bacon, and Onion

I was just lazy and threw the onions and mushrooms in a few minutes before the bacon was done cooking (I sliced my bacon before cooking) to save time. Other than that, I followed the recipe exactly. My potatoes were a little too stiff when mashed, so I added a little fat free half and half. These were perfect and a huge hit at our house. My husband has already asked for them again.

Quick Chiles Rellenos Bake

I would consider these more of a cheese enchilada than a chiles rellenos. They are however good. I used the 10 minutes enchilada sauce recipe from this sit that I added low fat sour cream too. I also used 50% low fat pepper jack to cut back on some of the calories and low fat tortillas. You never would have known it was a lot fat dish. Very easy to make and very tasty.
