Meatloaf with Fried Onions and Ranch Seasoning

This was okay. I only had a 2 oz can of onions, so added the whole package of stuffing into the mixture. It ended up really salty, I don't know if that was from the ranch or onions.

Bacon Cheddar Chive Muffins

These were a huge hit at our house. To lower the fat content I used Cabot 50% lower fat cheddar, egg beaters, skim milk and 98% fat free cream of mushroom soup. To increase the flavor I used 1/4 cup of snipped fresh chives. I think the fresh chives really made this dish and if you have them available I would strongly recommend them.

These were a huge hit at our house. To lower the fat content I used Cabot 50% lower fat cheddar, egg beaters, skim milk and 98% fat free cream of mushroom soup. To increase the flavor I used 1/4 cup of snipped fresh chives. I think the fresh chives really made this dish and if you have them available I would strongly recommend them.

Cake Mix Cookies III

I followed the recipe exactly and did not find these cookies oily at all. I did find the batter very crumbly and difficult to get on the cookie sheet. I was trying to use a scoop to do this and had to reform the cookies after scooping out of the bowl. Also, the cookies do not spread a lot. I don't have an issue with that, if you like thin crisp cookies you should be warned. I used a triple chocolate cake mix and Andes mint chips. After making both this recipe and Cake Mix Cookies I, my husband decided he liked this recipe better.

Cake Mix Cookies I

These are very good. I found the batter to be too think to even mix the chips in so I added a couple of tablespoons of water. This seems to have solved the issue. I used a french vanilla cake mix and dark chocolate raspberry chips. I suspect the issues I had with the cookies after baking had to do with the chips. They were very large and it made the cookies too soft to pick up. I let them rest for 10 minutes, but this seems to have helped only marginally.

Indonesian Spiced Rice

Mine ended up tasting like Yellow Rice from a box. Which is actually good because I like Yellow Rice out of a box, but quit buying it because of the fat and sodium content. I left out the jalepenos because I didn't want it spicy and left out the cinnamon because my husband had previously told me he didn't care for cinnamon in his rice. I used low sodium chicken broth and felt the end result needed a little salt. This was every bit as easy as boxed rice and I will make it often I am sure.

Easiest Teriyaki Marinade Ever

I didn't really care for this recipe. The cinnamon gave the chicken an odd aftertaste and I won't make it again. I followed the ingredients exactly and used the chopped up chicken to make kabobs. I left the chicken in the marinade for about six hours. It tasted strong, just not a taste I cared for. My husband said he really liked it.

Sam's Original Sauce

An easy, if not awe inspiring spaghetti sauce recipe. My mother makes a similar dish she calls tomato gravy. My husband didn't care for the stew meat and stated he prefers hamburger or sausage. I added a green pepper and half a red pepper to the sauce with the onions. I also added fresh basil, oregano, thyme and parsley the last few minutes before serving.

Lemonade Cookies

I would describe these cookies as sugar cookies with a slight lemony flavor. I had thought the flavor would be more intense. As other reviewers suggested I added an additional 1/2 cup of flour and decreased the cooking temperature to 350. My cookies did not burn and the dough was the consistency of a soft cookie dough. I had to keep it in the fridge between batches or it became difficult to scoop out. I love the idea of the lemony cookie, but this just didn't do it for me. They are not bad, but I will continue to search for a better recipe.

California-Thai Flank Steak

Wow! We loved this dish. I couldn't find rice wine so I omitted it. I used 1/2 a Vidalla onion rather than red since it was what I had. I couldn't find fresh lemon grass so used a jar of dried. I also left out the garlic salt and added a clove of minced garlic. Nothing in the dish has an over powering flavor and we couldn't get enough of it at our house. I was concerned about the 3 tablespoons of chile paste, but the dish had an undertone of spiciness, but wasn't hot at all. In fact, I planned to give my 4 yo a hotdog, but she not only ate some but asked for seconds.

Cauliflower Cheese Pie

Very good. I replaced the egg with Egg Beaters and the cheese with 50% light Cabot Garlic and Herb. I will make with plain cheddar next time as the garlic and herb cheese over powered the dish. I also replaced the dried basil and thyme with fresh. My husband and I both really enjoyed the dish and plan to make it again.

Slow Cooker Maple Country Style Ribs

These were okay. I probably won't make them again simply because I prefer ribs with barbeque sauce. I followed the recipe exactly and the ribs were tender, but a little dried out on the ends. They were not bad once you added some barbeque sauce to dip them in.

Orange Vinaigrette Brown Rice Salad

The orange taste over powered everything, it was too sweet and made way too much. There was closer to enough for at least 6 and possibly 8. I ate about a cup, but my husband only picked the oranges and spinach out of his. I won't make again.

Pasta and Herbs

Wonderful and easy side dish. I did half the butter to 1/4 cup and felt the amount was just perfect for 8 oz of pasta. I forgot to put the dried herbs in but after adding a little parmesean cheese on top it was perfect. I will make again because I love the extra flavor the fresh herbs add. I will be experementing as well with the herbs I add. I served with grilled pork chops and a green salad.

Honey Grilled Chicken

Good, with a mild flavor that isn't overwhelming. I would serve with a strong side dish. I used with pork chops rather than chicken. I also used light margarine so I never had the issue of my sauce thickening up. We will probably make again simply because this is simple and I usually have all ingredients on hand. I however generally prefer dishes with more flavor. I served with Pasta and Herbs (also from this site), a green salad, roast cauliflower and garlic bread.

Whole Grain Waffles

Wow very impressive. I thought these were great and never would have known they were "healthy" if I hadn't made them myself. I couldn't find whole wheat pastry flour so used regular whole wheat flour. I also used egg beaters instead of eggs and Splenda instead of sugar.

Mammaw's Waffles

I was nervous as I have never made waffles any way other than from a mix before, but these are really easy. I followed the recipe exactly. The only issue I had was my first batch ran over horribly. I may simply have a small waffle iron, once I decreased the batter to 1/4 cup they were perfect. I froze the leftovers and my daughter has eaten them for breakfast every morning this week.

Chinese Roast Pork

Amazing! This was the best pork roast I have ever made. Because I only had a 2 lb roast I decreased the cooking time to about 2 hours total. Also, I am nervous about basting meat in marinade used for raw meat, so I boiled the marinade before using to baste. The roast was moist, juicy and the outside with the glaze was to die for. My husband who usually likes the inside pieces fought with me over the ends.

Spinach Pie II

I make a lot of changes to attempt to lighten this recipe. I used 10 sheets of phyllo dough rather than pie crust. I simply sprayed with butter cooking spray and layering 5 sheets each for the top and bottom. I then decreasedt he opin and added 3 oz of reduced fat feta. My husband and I both really enjoyed it. Our 4 yo wouldn't touch it.
